How To Make Sushi Rolls (Hosomaki) (Recipe) 細巻きの作り方 (レシピ)

  • Making delicious sushi rolls at home is easy, you just need a few ingredients like tuna, cucumber, nori, and short grain rice.
    For the complete recipe:

    Ingredients:
    Sushi Rice
    3 rice cooker cups (540 ml) short grain Japanese rice*
    2” (5 cm) kombu (optional - traditionally, for sushi we cook rice with kombu)
    For Sushi Vinegar
    ⅓ cup rice vinegar
    3 Tbsp sugar
    1 ½ tsp kosher/sea salt
    Fillings
    1 Japanese or Persian cucumber (yield 8 rolls)
    6.8 oz (194 g) sashimi-grade tuna (yield 12 rolls)
    1 box Natto (fermented soybean) (yield 2 rolls)
    Everything Else
    5 full sheets nori (roasted seaweed)
    Vinegared hand-dipping water (Tezu): ¼ cup water + 2 tsp. rice vinegar
    Soy sauce
    Wasabi (optional)
    Pickled ginger (optional)
    Equipment you will need:
    One bamboo sushi mat (See the post for the recommendation)

    These hosomaki (seaweed on the outside) rolls are the best! Good job at making it look easy😋 and it’s unfortunate that most restaurants where I live seem to do the rice on the outside sushi. I have to ask them if they can do it with the seaweed on the outside because I like seaweed, but it always feels like I’m bothering them by asking. 🙄Some have even told me they don’t usually do it with the seaweed on the outside because of something to do with the fillings which is an excuse. A Japanese woman told me recently that the rice on the outside isn’t even the traditional Japanese way of doing them, and also traditional rolls are often very simple like in your video. Not elaborate like the rolls out there with a lot of fillings and rice on the outside. Personally my favourite is Avocado rolls with or without other ingredients and of course with the seaweed on the outside. 🥑👍

    Thanks for the recipe. Turned out great. I guess all the practice I had in high school rolling things has finally paid off. Wonder what your favorite rice vinegar and type of sugar and salt is. I used Marukan and thought could have done better on vineger. Domo Arigato!

      I use mitsukan rice vinegar, but if you go to Japanese grocery store, there are more imported rice vinegar from Japan (cost double though). They taste better. But my recipe is based on the common vinegar I can get in the U.S. :)

      I live in Berkeley and there is a good Japanese market called Tokyo fish. I will try out some of the other vinegars. Thank you and looking forward to trying some of your other recipes.

      I go to Nijiya in San Mateo, which carry some other vinegars. I think Tokyo Fish Market should carry other brand as well. :) Arigato, Matt!

    thick sushi rolls are nice but sometimes I make them too bloated and its nice to have these mini bite size sushi rolls for a bit variety and 1 filling.

    Do you know of any substitutes for avocado in sushi? I use to make it all the time but then I developed an allergic reaction to avocado and can’t have it. When I make certain rolls without the avocado it feels like it’s missing something. Any suggestions?

    Hello! I absolutely love sushi and love making it. But many people tell me that they’re hesitant to eat sushi because as they say “it’s raw fish”. What do I say to those people in order to explain that sushi fish is safe to eat even though it’s not cooked fish. Arigatou!!!

    Namiko! so glad to have found your video's; very nice and simple way of showing the delights of Japanese cooking. Now, I have a question about seaweed sheets for the sushi. My partner and I can't really get normal seaweed down because of it's fishy/ ocean taste and I have just discovered that there is a seaweed called dulse that doesn't taste like the ocean; but I can't see to be able to find sheets made of it...any ideas? I would be very grateful.

    @JustOneCookbook can i know how to do for the seaweed (nobi) because its from hard and how to make it soft? Should i heat it or put a water to make it soft?

      No, not for nori. Rice paper, you put into water, but nori you don't have to. When you put nori on hot rice (or hot rice on nori), it'll be soften. :)

      Just remember the Japanese live among the longest healthiest lives in the world and eat white rice with every meal from what I understand. Rice is very healthy. If you want a white rice with low GI then use Basmati but sushi is best with a sushi type rice. 😊

    does the tuna have to be sushi grade? or any other raw fish?

      Fresh tuna is one of my favourite fish but like salmon it's pretty high in Mercury and should not be eaten to often. I have on occasions used tinned tuna which is a cooked fish and a different small species of tuna which has very little Mercury. It tastes yum but not as nice as fresh tuna which is pretty special imo. 🐠

      No it is not safe to consume raw with non-sushi grade fish. Please find sushi grade fish or cooked fish for making sushi. :)

      Rice or sushi vinegar is Far nicer, it's much sweeter and isn't harsh like white vinegar and tastes very different. You really do need sushi vinegar or mirin.

    i'm new to this so i followed everything in this video to the "T", good video but my own experience says don't cut the nori sheets unless you're definitely making one filling sushi. Even then this person is great at rolling sushi, cutting it obviously leaves little room for error if you're bad at rolling. Also i don't see the point of the step of vinegar water for the hands? can't you just use the rice cooker spoon/spatula? you have very little time during the process of spreading the rice as your hand dries fast and rice will stick on your hand THEN you have to re hydrate your hands to continue. With the rice cooker spoon you can just slice/spread the rice and just drip the spoon in the water if you need to

      that tezu is not necessary, i don't see how that helps the process of making sushi, i'd say use abit of water to keep your rice cooker spoon wet if you need to, otherwise you'll always end up with alot of wasted water. p.s the font could be used better, i saw the words during the laying of the seaweed down as "non shiny side down" not "nori shiny side down" totally confused me

      Like everything else it takes a bit of practice. Persevere and you will get there. I used to get my fingers and hands covered with Sushi rice but after a while I worked it all out. Your knife really does need to be very sharp and worth wiping after every cut. The end result (even the early efforts) make it well worthwhile. I also like to smear some Wasabi along the Nori. Hope this helps.

      +MaZEEZaM actually not true I have used tinned tuna which is cooked as a substitute before and tastes yum but not as nice as fresh tuna or salmon which can be difficult to get sashimi grade fish where I am.

      Rice vinegar is more mild than other white vinegar etc... so if you don't like strong vinegar taste, I highly recommend to use it for sushi. :)

      Madiha Nadeem you still need to add salt. The amount of salt is not enough. It's rice vinegar you are talking about right? Not sushi seasoning vinegar bottle.
