Cinnamon-Sugar Churro Cookies STUFFED with Chocolate

- Churro cookies combine sweet vanilla cookie dough, cinnamon sugar, and a molten chocolate filling. They taste just like a churro dipped in chocolate sauce!

Ingredients
Chocolate filling
6 oz semisweet or bittersweet chocolate bar (170g)
⅔ cup heavy whipping cream (157ml)
Churro cookie dough
1 cup unsalted butter, softened (226g)
1 cup light brown sugar, firmly packed (200g)
½ cups granulated sugar (100g)
1 large egg + 1 egg yolk, room temperature preferred
1 ½ teaspoon vanilla extract
3 ⅔ cups all-purpose flour (450g)
2 Tablespoons cornstarch
2 teaspoons baking powder
¼ teaspoon baking soda
¾ teaspoon table salt
For Rolling
¼ cup granulated sugar (50g)
2 teaspoons cinnamon

Instructions
00:00 Introduction
For the chocolate filling
00:17 In a microwave-safe, medium-sized mixing bowl, combine chocolate and heavy cream. Microwave on high for 25 seconds. Remove from microwave, stir well, and microwave for another 25 seconds. Whisk well until completely smooth. If not yet smooth, return to the microwave in 10 second intervals, stirring in between, until smooth.
01:20 Allow chocolate to cool for at least 10-15 minutes or until it is firm enough to be scooped and hold its shape (you can refrigerate it to speed this up). Meanwhile, line a plate or small baking sheet with wax paper.
01:35 Once chocolate is firm, scoop into Tablespoon-sized dollops (15g) and drop onto prepared baking sheet. Transfer to freezer while you prepare your cookie dough, at least 15 minutes.
For the churro cookie dough
02:54 Preheat oven to 375F (190C) and line baking sheets with parchment paper, set aside.
03:03 In a large bowl using an electric mixer (or in the bowl of a stand mixer with the paddle attachment), cream butter and sugars together until light and fluffy.
03:26 Add egg, egg yolk, and vanilla and stir until well-combined.
04:40 In a separate medium-sized bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.
05:35 Gradually add the dry ingredients to the wet (I do this in about 4 parts, stirring until just combined after each addition), stirring until completely combined.
07:25 Scoop ¼ cup of dough (65 grams of dough) and roll between your palms to make a smooth ball. Use your thumb to press an indent into the center of the dough. Take one chocolate dollop from the freezer, press into the indent, and cover over completely with the dough. Roll between your palms again to create a smooth ball with no chocolate showing through the dough.
08:15 Whisk together sugar and cinnamon for topping. Roll dough ball through the mixture, coating all sides evenly. Place dough balls on a wax paper lined plate and place in freezer for 10 minutes before baking.
08:55 Once dough balls are done chilling, place on prepared baking sheet, spacing at least 2” (5cm) apart.
09:00 Bake on 375F (190C) for 12-13 minutes, until edges are just barely beginning to turn light golden brown. Allow to cool on baking sheet for at least 10 minutes before carefully (they’re fragile when warm!) removing to a cooling rack to cool completely before enjoying. Beware that the chocolate is very hot when warm!

Store in an airtight container at room temperature for up to 2 days, or in an airtight container in the refrigerator for up to 5 days, or tightly wrapped in the freezer for up to 3 months.

Those look delicious! This might seem random but has anyone ever wondered why there isn't a "bakers" edition of ice cream aka cookie dough scoopers? Meaning 3-4 different sized scoopers in one package. I mean yes there are people who weigh out each cookie. Especially those of us who've made many, many, many Levain copycat recipes over the years. But if there was a package that included a very small scooper that you could use to scoop out filling for cookies or for cake pops. Then the next size would be a medium, then a large and then the gourmet or NY size scooper. I think that would be a great bakers buy. Also these churro cookies kinda remind me of snickerdoodles. That's not a bad thing because snickerdoodles are delicious. I've been wanting to bake a dulche de leche stuffed cookie. But I'm not sure if it would work best with the outer cookie being something like what you made or a chocolate chip or a butterscotch chip or a combination of chocolate chip and something else? I thought I'd leave this in the comments in case anyone has any thoughts on what the outer cookie should be.

As a churro fan, I'll bake these today. Sam, why is chocolate often given in oz when everything else is provided in grams? I've always wanted to ask.
I hope you love them! And the oz is what I provide for the US readers when I use a baking bar (as they're sold in oz instead of cups so it's most convenient) but what I don't mean to do is not include the gram measurements at all! Thanks to your comment I just realized I left them off from this recipe so I went back and added them. Anytime I provide oz I (mean to) provide grams as well. :)
