Ingredients and Measurements:
To season the chicken:
1 chicken chopped and washed
salt to taste
1 tsp. black pepper
1/2 tbsp. garlic powder
1/2 tbsp. onion powder
1 tsp. Chinese 5 Spice
1 tbsp. Guyanese thyme
2 tsp. all purpose seasoning
2 tsp. paprika
1/4 cup casareep (use more or less for color preference)
2 tbsp. soy sauce
fresh seasoning (See below)
For the fresh seasoning:
2 scallions
3 stalks of culantro
2 wiri wiri peppers
1 pimento/seasoning pepper
1 inch piece of ginger
10 cloves garlic

So the brown stew chicken that I have been cooking for all these years has a new name now "pot roast"
They’re all pretty similar but different methods and sometimes different seasonings.
