It depends on your goal. But since Spanish is the most spoken and is a "typical" dialect of modern Latin continuum , start with it. What I mean by typical, for example French and Romanian, are not typical dialects of modern latin languages. If you speak Spanish, Portuguese Italian Catalan etc you in the center of the family. If you speak French or Romanian, you're kinda isolated. So pick Spanish.
French is a romance language that derived from Vulgar Latin, but it was influenced by Celtic and Germanic languages over time. It did evolve from a language called "Gallo-Romance" which referred to the Latin spoken in parts of Gaul.

While west Germanic language decently influenced French in many ways but it still not that significant. The big difference between French and other romance languages is the phonology. Can we say all the phonological transformation of French is due to that west Germanic language? Not at all. In the phonology French got an H in the beginning of many words but these H are not even pronounced anymore. French and Italian have 92% cognates words (Langsfocus chanek). It is the highest among all 5 big romance languages. The main difference is the French phonology. And that is almost exclusively due to French internal evolution.
