That is a keeper recipe and using good cheese is wonderful ❤️Keef if you put 1/4 tsp of bicarb in a tbsp water and put it in your onions they break down faster as in minutes to caramelize
You not had one of those toys before? I've worn a few of them out! We went through a phase of doing what my other half calls Potato layery thing (AKA dauphinoise potatoes) and it speeded up the slicing! You sure that was a chimney and not a nipple! Never thought of precooking potato for a pie, that opens up cheese and onion pasties!
KeefCooks: The dough came out of the food processor, and you said you were going to finish it by hand. Then, the video cuts and a new section starts. We never knew how long you spent kneading the dough. That's kind of important. I'm attempting this recipe now. I'll have to guess how long I need to knead the dough.

In addition to potatoes, I've also made a batch filled with pieces of chicken breast (with asparagus spears, in a bit of bechamel sauce) and another batch with a combo of chorizo and Italian sausage (along with mushrooms). All very successfully. Thank you again, Chef. A friend of mine who lives in France, tells me that she gets pithiviers there, but stuffed with sweet ingredients. I'm about to try that. To that end, I'll sauté pieces of apple in a bit of butter (cinnamon, nutmeg, pumpkin spice, allspice will be added, as well as a bit of Peach Triple Sec and sugar). I will also decrease the amount of salt in the dough and increase the sugar in it. It should work! What do you think, Chef? Hey keef! Just want to mention that the V logo you put in your thumbnail is for Vegan, rather than vegetarian. Not a big deal but I got excited for a moment because my girlfriend is vegan before I realized what happened
If you Google vegetarian logo and look at the image tab you'll see letter v with a leaf is generally veggie, while vegan logos tends to be a couple of leaves in a bit of a v-shape. But the whole thing doesn't look too settled yet. Sorry for upsetting your GF.

Well, it's got cheese in it. The onion is caramelized, the potato slices are coated in milk/cream and there's a bit of herbiage.
Sorry, but this recipe requires too much time and effort. I'd make it only on a very special occasion.
No need to be sorry - it really is quite a lot of work.
