Hi Pam, I have continued to binge watch your canning videos and have learned so much! I thought that I would share a couple of ideas for zucchini that I have discovered. We are campers (in a camper van), and dehydrating really reduces the volume and weight. One of the things that I experimented with is shaping the noodles into a nest. I have to take out alternating trays to accommodate the height. When dry, I stack the nests inside wide mouth canning jars very gingerly. Next, I use one of the attachments to suck out the air (at a low level if you have that option on your vacuum machine. It works very well. I got the idea from seeing nests of pasta noodles in the grocery store. I dry the noodles on parchment paper or a paralflex sheet in my Excalibur dehydrator. I have also done butternut squash noodles. Food Saver makes a hand held vacuum sealer that is useful if vacuuming jars often. They may have been discontinued as they seem awfully expensive on Amazon, but I found mine on eBay and it was still new and in the package. FoodSaver Vacuum Sealer FSFRSH0051-P00 FreshSaver Handheld Rechargeable Sealing System, White A couple of years ago, I made zucchini hummus substituting the squash for the chickpeas. It was really good. And then, I used the zucchini chips as the dipping tool! The hummus can even use rehydrated grated zucchini! (Recipe below) Thanks for all that you and Jim do! We shred zucchini and dehydrated it after it is dry we put in vacuum seal bags, I use in soups, salads, egss etc. I brought some silicone dehydrator mesh sheets on ebay and lay the shredded zucchini in my dehydrator and the zucchini pulls off in sheets , so easy no sticking , great.
I'm doing this for sure! I've got a question for you...do you have a video, or a list of things you wouldn't dehydrate again? We've doubled our garden this year and I don't want to dehydrate something that won't work. My husband thinks I'm a little crazy now. Our dehydrator is going nearly every day!

I save a step when dehydrating my vegetables by placing the racks, with the screens over my sink or on a towel, and let the water run through them drain in place and ready to go into the dehydrator.
I am growing spaghetti squash this summer, perfect video so I can use all produced sqash and share with my daughter who just served fresh squah as spaghetti!!! She will be delighted!!
That dehydrated squash you held up could almost double for a piece of abstract art! 🤣This was pretty amazing to see when brought back from the dead. lol! It looked really great!! And you never waste a THING. Its sooo satisfying to see others do this as well. Wasted food is my personal kryptonite. Obviously, yours too. 😍So great to see. I also use the British Siri...because I think I have a crush on him. lol Its the accent. 😍👏🏻

Could you dehydrated several ‘ mounds/nest’ of noodles? Like in serving sizes? I have seen little noodle nest of dry pasta like that before, just a thought
I have tried this with success but then I made the mistake of cramming my dried *noodles* into the jar, which of course broke it up a lot. This video inspires me to try it again. I have also tried making *chips* from summer squash, the chips are quite nice but the problem I have when making them is finding a good way to season them. First time I did it they were too bland, the next way too salty and I used those for soups. Not giving up on the chips, will find a good way to season them eventually.

I gifted my spiralizer when i thought I would never use it. You make it look easy. I've been struggling with a non mechanical brand, hand cranked ever since. Lesson learned. If a food is completely dehydrated, you do not need to store it in the freezer, but you could if you wanted to. I don't have room in my freezer for doing that. I place dehydrated foods in bags or jars and vacuum seal them.
Science class would have been so much more exciting if I had had you as a teacher. But happily sitting in your “classroom” now.

Like the Italians, dry the spirals in nests--enough for one in each nest, and then store in mylar or large mouth quarts.

I think you are doing a great job experimenting with your foods. I am sure you will be successful and your chips will to your taste.
Use Garlic & Herb Mrs. Dash and a little salt. They are amazing zucchini chips then!

I have not, but I bet it would work if you have the fruit leather insert for the trays. You should try it! Then you could powder it!
