- CHICKEN KOFTA CURRY (CHICKEN MEATBALLS IN CREAMY GRAVY)
Soft chicken meatballs dunked in delicious creamy gravy - Here's chicken kofta recipe with minimal cooking involved, you will be in and out of the kitchen in less time but with something spectacular to show.
INGREDIENTS
For the koftas (meatballs):
500 g ground chicken
1 tbsp ginger, finely chopped
1 tsp salt
1 tsp fresh cilantro , chopped
3 -4 green chillies, finely chopped
1½ tsp cumin powder
½ tsp garam masala
½ tsp crushed pepper
optional ingredients - ½ tsp ground cardamom, ½ tsp ground nutmeg
For the kofta gravy:
1 piece Cinnamon Stick, about 1 inch
2 - 3 Green Cardamom
3 - 4 Cloves
5 - 6 Tbsp oil
2 large onions , ground to a paste
1/2 cup tomato puree
1 tbsp ginger-garlic paste
½ tsp red chili powder
½ tsp turmeric
1 tbsp ground coriander
1 tbsp chicken/meat masala (or 1 tsp garam masala)
½ cup light cream
1 tbsp kasoori methi
½ tsp salt
optional ingredients - 1 tbsp ground almonds, ¼ cup plain yogurt
Directions-
In a large bowl, combine together all the ingredients for the Koftas and mix really well. With wet hands, form meatballs, about the size of golf ball. Refrigerate for 30 min.
In a large skillet or saucepan, heat the oil on medium heat . Add Cinnamon Stick, Cardamom and Cloves and fry for few seconds. Add the onion paste and ginger- garlic paste and sauté for about 5 minutes, stirring occasionally, until the onions changes color slightly and all the moisture evaporates. Add the turmeric, coriander, red chilly powder and chicken masala and cook, stirring continuously , 30 seconds more. Sprinkle some to prevent powdered spices from burning. Add in the Tomato Paste and mix well and cook for 5 minutes or till the Oil separates from the mixture. Add 2 cups Water or per the gravy you like , cover and allow the Curry to come to a rapid boil. Take out the Kofta mixture from the refrigerator and and drop it gently into the boiling Curry one by one. Cover and cook for 10-15 minutes (longer if the koftas are bigger). After the 10 minutes, remove cover and very gently flip the koftasand simmer 8-10 minutes or until the koftas are cooked through . Add the cream, salt, and kasoori methi and cook for 5 minutes more. Finally, sprinkle some chopped coriander leaves on top. Yummy Chicken Kofta Curry is ready to be served.
