Jason, you are an excellent chef(seen some of your programs), I do try to relive the sensational cooking experience, dishes of my mum, that she prepared whilst I lived in Trinidad Albeit in London the spices that you used from the pre-packed bags is not readily available, perhaps one will have to use a number of herbs and raw spice to achieve the powered spice Some of the language used like "chonka" and " kalchul" invariably brings back wonderful memories of home Thanks for sharing this with us I will be delighted to visit your restaurant in TT when next I visit and wishing thinking that you will invite me to a river lime(I will sponsor the drinks) Kind regards Vish

Agree !!!! Coconut milk does temper down or neutralize the spices bringing combined flavors to a mouth watering delicacy. It's also healthy for you.
