Chana Masala is a recipe that is especially made on Ashtami or Navratri Prasad for Kanya pujan. Chana Masala is also enjoyed as an Iftar Recipe.
I make a special chana masala for my kala chana. This fresh Chana Masala is what gives it that characteristic flavour. For the dark colour of the Chana Masala, I use an iron kadhai to make the Chana Masala.

Recipe :
Chana Masala
Preparation time: 20 minutes + soaking time
Cooking time: 25 minutes
Serves: 4
Ingredients:
2 cups Kala Chana (Bengal gram)
3 tbsp Oil
2” Cinnamon
2 Black cardamom
4 tbsp Coriander seeds
7-8 Cloves
¼ Mace
2 Bay leaves
2 tsp Cumin
1 tsp Pepper powder
1 tbsp Coriander powder
1 tsp Red Chili Powder
2 tbsp Dry mango Powder
½ tsp Cumin Seeds
1/8 tsp Asafoetida
Coriander leaves to garnish
Salt to taste
Method:
Soak the Bengal gram overnight or for a minimum of 8 hours.
Pressure cook the soaked Bengal gram with the bay leaf, black cardamom, 1tsp salt in 3 cups water for 5 whistles or till done.
In a pan, dry roast the Cinnamon, Black cardamom, Coriander seeds, Cloves, Mace, Bay leaves, Coriander seeds, Cumin seeds and Cloves.
When fragrant and lightly coloured, remove from heat.
Cool and grind to a powder.
Mix in the coriander powder, red chili powder and the dry mango powder.
Heat oil. To medium hot oil, add the cumin seeds and allowed to splutter Add the Asafoetida. Next add in the prepared chana masala and mix well.
Add half cup water and bring to a boil.
Cook till the oil separates.
Add the boiled Bengal grams and toss well. Cook till all the water is absorbed by the spices and the spices coat the chana well. Garnish with chopped green coriander and serve.

Navratri main amchur use kar sakte hai?
Ofcourse it's just dried mango powder which is a fruit powder.. and chana is a grain it's not to be consumed while fasting.. it is made on ashtami or navami as bhog for Durga maa ☺️ happy navratri

Add corn flour to the mixture for good binding.
Dip in flour slurry and roll in bread crumbs. Refrigerate for 30 minutes and then fry .

That applies to brass utensils.
Aloo samosa fillings are made in iron kadhai using amchur to give it that distinct black colour.
