This meal evokes in me the autumnal warmth, smell and taste, the perfume of wood fired heating that lingers in the air throughout the hills of central Italy and exquisitely good food from home grown ingredients.
We are fortunate in having a large garden of which a good deal is wooded. In this grows a wide variety of mushrooms, of which among the best are Chanterelles, called Galletti (literally young chickens) in this part of Italy. So the major ingredient of this dish is home grown/picked which for us makes it doubly rewarding as purchasing these flavor nuggets is painful...
In this video, we’ll show you how to prepare and cook Chanterelle mushrooms in our favourite way, served with wonderful fresh egg tagliatelle pasta.

RUclips knows me extremely well considering they recommended this video. I love pasta and I pick chanterelles every autumn. Will try making a pasta with them next autumn. :) Thanks for the video.

Next autumn we expect to upload a video showing how to cook them with white wine, which is a fairly common recipe in this part of Lazio and possibly mixed with other mushrooms (we get a lot of Wood Hedgehogs). Unfortunately the Porcini were very poor this year, I think the summer was just too hot & dry. Fingers crossed for '22.
