I baked two eggplant for a middle eastern recipe where it called for draining the cooked eggplant in a colander to remove excess liquid. I thought this step unnecessary but followed the recipe and was I surprised at how much liquid came out...21/2cups! The pre-salting is a good idea.

Extra virgin olive oil has a ridiculously low smoke point, so, it might be a good idea to blend some of that evoo with a light olive oil to better manage the smoke point while keeping that olive oil flavor.

Thats looks delicious, I will definitely try this recipe (but maybe without the honey). I really like eggplant, but I always find them difficult to prepare them, so that they are not soggy and oily. This seems like a great way to avoid both.

Hola, when I've had these in Málaga they have come with miel de cana, or molasses. The slices were much thinner too so they fried into crisps. I put on a lot of weight that holiday! Love your channel

I love your channel and love your easy recipes and guide through.. Why are you using beer for the batter and what does it add to the recipe?
Beer adds flavor and helps lift the batter, you can also use club soda or sparkling water :) Much love

I love those, there is a place by my house called Taberna Giralda that makes them like thin chips, the best.

@@LindaC616 it’s a Spanish Tavern where they serve an extensive Tapas menu, and also bigger entrees. I live in Miami, there are many excellent Spanish places near me. This particular place is in a city called Coral Gables, which is a wealthy city JUST WEST of Miami.
@@robertrico7598 oh! Lol, Giralda is the name of the cathedral in Seville, so one of my favorite tapas bars is nearby, ergo has the same name.
A friend of mine has a condo in Brickell Key. We went to CG to do some shopping; I think her favorite bakery/deli/grocery is there (Graziano's, an Argentine place). And I know I was in heaven when we went to the B&N in CG, as the one nearest me has an extremely poor untranslated literature selection.

Looks delicious 😋 Is the purpose for using beer for flavor, or for the fizz? Because you mentioned substituting with seltzer water.
well it does add flavour, of course, but would probably be fine without the beer, if you don't want to use alcohol. however, using carbonated water in a batter can really fluff things up. try it next time instead of milk when you make pancakes (or half milk half water). it is surprisingly nice

I've never liked eggplant that much because I didn't like the mushy texture. I guess I've never had them prepared correctly. I'm going to have to try this! Maybe you'll make me an eggplant fan.

When I make this, I’ve had success with soaking my eggplant in milk for a half hour instead of salting them. I heard that’s a traditional Spanish method, is that true?
Here in Malaga we put miel de caña, not honey. The bitter flavour works better than the sweetness of honey.

Had this in Cordoba, where they used molasses instead of honey. The molasses really was better
Another tasty looking recipe I'll have to try. I know you want to present these as traditionally as possible, but I can't help wondering what the result would be if you mixed some heat (maybe some cayenne) into the batter to contrast with the honey. May have to test this.

Not totally, I think I saw a couple of recipes with sausage, and he does plenty of egg, seafood, and fish dishes.
@@LindaC616 Egg is certainly vegetarian(not vegan), and i know some vegetarians who eat seafood(pescetarians technically), sausage is definitely not vegetarian tho...I guess the Spanish kitchen is mostly veggie food
@@Wo0dGlue Yes I know eggs are vegetarian. I noticed as you did that there are a lot of recipes with beans and vegetables, so I cruised through the list to see what he has. But potatoes are pretty much a staple of cooking in Spain. Along with onions and garlic
