I adopted this dish for my menu in Israel. And it is important for me to say that within a few days the dish became a hysterical hit!!! And I got great feedback on this dish! So Albert, thank you so much for the wonderful recipe and dish.
And this is what the first customer who ate wrote to me: "The eggplants are addictive! I fought myself to stop snacking because it's not nice not to leave anything for the partner. A huge success!"

I baked two eggplant for a middle eastern recipe where it called for draining the cooked eggplant in a colander to remove excess liquid. I thought this step unnecessary but followed the recipe and was I surprised at how much liquid came out...21/2cups! The pre-salting is a good idea.

Extra virgin olive oil has a ridiculously low smoke point, so, it might be a good idea to blend some of that evoo with a light olive oil to better manage the smoke point while keeping that olive oil flavor.

well it does add flavour, of course, but would probably be fine without the beer, if you don't want to use alcohol. however, using carbonated water in a batter can really fluff things up. try it next time instead of milk when you make pancakes (or half milk half water). it is surprisingly nice
