And the first place i fished when i moved from cali a couple yrs ago second time there i got the trifecta . .. i use to think channel from a clean river was best untill i had a flathead from the Arkansas. Now i love to keep 1 flathead between 5 - 10 pounds . Very clean tasting and white flakey ... try it tony

Flathead is white and flaky. Remove fat and red meat. Belly meat is good remove the membrane. Cheek meat is good too. Definitely my favorite catfish. Flathead, Blue, channel cat in that order.
Imo,flathead is good,but blue cat is much better.Blue cat is tender and flaky and flat head meat is tighter grained and different texture.Blue cat all the way.Flathead is my least favorite catfish.Id rather have channel.Just my opinion.Just to be clear,I love eating all catfish.Theyre all good eating.
