Hi ! About the "sausage" it's NOT exact. The first things that you show is a "Rosette", who is a type of charcuterie, that we call "Saucisson". We have really a lot of type of sausages in france like rosette, saucisson sec, diots de savoie, saucisse fumé, knacki, knack d'alsace, saucisse de strasbourg, saucisse de montbelliard, and we use them for different things. About the white thing on the rosette and other saucisson, its a mushroom, that use too make the saucisson, it's completly safe to eat.
