    Let's talk about the amazing roller coaster of odors produced by a lactic ferment of rye grain over the course of two weeks with alpha glucans enzyme and a straight out war ensues between lactobacillus and Saccharomyces cerevisiae.
    It starts as a wonderful grain/bread smell. Then starts to get a sour smell, then like a mild provolone cheese approaching a barnyard from a distance. Then full on south side of a north bound cow. To piles of manure, then lindburger cheese mixed with liquid brie left on a dashboard in the sun. Then fades to a dry parmesan and sharp cheddar. Back to a cheesy whole grain bread, then to sweet Hawaiian bread, to pineapple mango candy with a hint of citrus.
    Then you know it's ready !
