You will Need
1/2 lb / 250g of Prunes
4 Large Granny Smiths Apples
1 Brown Onion
13oz / 375g of Sugar
1/4 of a cup of Salt about 70g or 2.5oz
1 1/2 pints / 900ml of Malt Vinegar
1 teaspoon of Ginger
1/2 a teaspoon of Allspice
1/2 a teaspoon of Cayenne Pepper
1/4 of a teaspoon Fresh Nutmeg

Hi i have made this sauce today and i have a bottle of HP sauce and asked my Filipino wife and she says that they taste around the same only my home made is just a little better.Thank you for this recipe,it's superb.I am British and i can remember HP when i was a lad and this recipe is the same as i remember.

Here in Syria, I didn't find most of the ingredients so I used alternatives; balsamic vinegar, candied prunes. The result was just beautiful.
The measuring was spot-on, the ingredients fused together and homogenised nicely.

G'day! Fan from Australia here. I tried making this yesterday after a relative recommended your video to me. It turned out incredible. My dad made some Guinness pies and added some of the sauce into the beef filling giving the pie a wonderful kick!

I just made it, and you are right, it is so much better than a cheap supermarket brand. I did a taste comparison and honestly, the homemade one made the shop bought sauce taste like sweet goo. It is the only way from now on. Thanks so much.
3rd time making this sauce since HP sauce in Thailand is £5.50 a bottle.
I have to tweek the ingredients since granny smiths are imported from Australia and are an arm an a leg.

I recommend using coconut sugar. Its super healthy unlike other sugars, its low gi and tastes so good. Its also brown. You can buy coconut nectar too so good.
3rd batch just made today - thanks Steve - before I saw this video I didn’t really know what was even in Brown sauce but have always loved it’s piquant tangyness .Love it .Love it . Love it .
Brilliant Steve, was a big hit with all my friends here in Thailand.
I lived in America for a few years and aside from not being easy to get decent back bacon I just couldn't find brown sauce anywhere for my bacon sarnies, so I basically had to have my family send care packages from England with a few home comforts I couldn't find anywhere.

Lovely. This disappeared from shelves here in Zaragoza, Spain, after Brexit. It's one of my most precious ingredients in meals. So I'm so glad to have stumbled upon your video. Have now made and canned this recipe 5 times in the last 6 days! I have added grapes, currents, dates, gala and sunrise apples to go with the granny smith apples, cloves and even some dried cranberries. The joy of cooking. Find a great recipe and start experimenting. Thanks again. I look forward to the batches I've made in the coming years once they have aged.

I’m 46 and was born in Dorset and I grew up in the US and England. I remember a HP brown sauce from when I was a kid. I’m not a big sauce user, I do like A-1 a lot.
I picked up some HP in a British section in a local US grocery store and it was a glorified super sweet tasteless ketchup. I will try this recipe. I’ve seen similar ones in my Gran’s British cookbooks from the ‘50’s which I have.
I totally agree, the shop bought has gotten sweeter and less tart as it should be, so this way you can control the flavour, if you can get old style Bramley Apples it would be even better.. Enjoy

A hint for people making this you can put the apples on your spiralizer if you have one and then just make a couple of cuts through them but the core will be left behind and so will the skin.
I really do not know how many times I have watched this video over the last year more like two years to be honest, promising myself that I will get around to making it one day …….. well that day finally arrived I followed your recipe to the “T” apart from halving all the ingredients, hubby is the No. one fan of “HP” brown sauce & dislikes very much that we in the UK (perhaps other places too) can only buy it in plastic bottles as it leaves a tainted taste ……. Moving on Hubby gave it the thumbs up 👍 & that is on the day of making it when as you said it is still young…… it can only get better…… I think I may have made a rod for my own back …… nevertheless Thank you Steve …… one very happy Hubby 🤗

Not easy to find and high price here in Spain eu2.60 for a 220ml bottle so I tried this and WOW!!!! so easy and no preservatives and made 10 times a small bottle for the same money! win win win ….. will never buy again thanks Steve

Marvelous recipe! I was away from the UK for 30 years and the HP sauce I bought on my return was yuk!!! Tried this recipe and now I feel I've come home.
Just one thing, I added 2 teaspoons of organic pectin and it gave a tip top consistance

If only I'd have found your video a week ago Steve !? ......As I now have a batch ( 7 bottles ) of something that doesn't give me the brown sauce hit I feel I will get when I make your recipe. I should have questioned it when I read "Fennel seeds, Juniper berries , Anise "...... ????... I even put garlic in it as well as lots of black pepper to lift it ...doh!! , Ok I have a plan , ..... shhhhh !! , don't tell my dear wife as its going to be washed away bottle by bottle so I can follow your recipe . I live in Thailand and the original HP sauce is so expensive that I thought I'd give it a go to make my own. Turned out great, but tweeked the second batch with a few cloves, mace and
I upped the cayene pepper a little to give a bit more bite. Plus bulked it out a little with a couple of tomatoes.
Now I'm making liters of the stuff every month to keep my mates stocked up too.

Hi Steve I made your brown sauce and it's delicious. I even compared the colour with regular HP and hp is a reddish brown while your sauce is more sauce brown. I compared the taste and even just fresh made is 100% more tasty than manufactured HP Sauce. I red the ingredients of HP sauce and note that HP Sauce has a tomato base, blended with white vinegar and spirit vinegar, Sugars (molasses, glucose-fructose syrup, sugar), dates, cornflour, salt, artificial spices flavorings and other nasty stuff. Thanks for sharing, it was so easy to make and i will not be going back to buying anymore, from now on it's homemade for me and my family. :)
Just made some French toast or piece dipped in egg. First had it back in the early 70's at my aunt Sally's in East Kilbride. Awesome with HP. Don't have any here in the Philippines but sure I could find it somewhere but not as cheap as in Scotland.
I will be going to the palengke on Thursday morning. Hope I can find all ingredients.

Followed this recipe loosely. Didn't have the same apples. Just some random kind from a tree nearby and probably i bit more nutmeg as I didn't really measure. But i have to say it turned out to be spectacular!

I made this this week (June 2024) its really great tasting. I am into healthy eating so I swapped the sugar for honey and the salt for sea salt. I think the brown colour comes from the vinegar and not the brown sugar because I did not use brown sugar.

Only brown sauce I've ever known is mom's sauce, only things she used was common kitchen oil and wheat powder, which you constantly mix and turn around on pan. It's though suggested to never move your eyes away from oiled powder since it cooks really quick and might burn easily.
But once you've cooked the powder into nice brown powder, you pour it down on another pan with ingredients you have used ( on my case, minced meat that was cooked on high volume), and putting really hot water, mixing and boiling it a couple of minutes.
I just made some too this morning. The onion needs to be grated in order to cook in time with the other ingredients. You are right. It tastes like the original and not the watered down variety with the artificial food coloring and other additives which HP use nowadays. The taste is fruitier and much stronger if you follow the recipe. It's almost addictive and I haven't aged it yet. You will never buy another bottle of the sauce and will make it yourself forever. It is a little lighter in color than the nowadays HP variety, but well worth making.
This recipe converted my Australian wife to brown sauce, it's at the point where I might have to hide it.

When I was working at the British pub in Tokyo, many British customers asked brown sauce! We had so many bottles of HP sauce in the pub but I have never tried it yet... I got to try it before I leave here!!!

Hi Steve...I just did this sauce using your video and the result was very great.
Me and my family simply love it.
We kept at home a bottle of HP sauce made by Heinz Canada to compere the result and even though HP it is not that bad, yours its way better and all natural.
My daughter likes it with a little bit more allspice and cayenne pepper and its turns out very good too. You know, those little changes on any recipe its the meaning of Home Made. Thank you very much for shearing.

Fantastic recipe I'm really inspired I live in Upstate New York and I've been enjoying HP Sauce at the local Scottish games all my life I ran out of my final jar and if made my own HP with ketchup to tablespoons steak sauce to tablespoons and worship Shire sauce 2 tablespoons stirred chilled and it tastes pretty close but I think yours is more authentic I will be giving it a try

I had no idea what was in HP sauce though I have only had it a couple of times. I think I will have to try making it, if you ignore the sugar and salt it’s healthy...
It you ignore the Sugar and Salt it's tasteless. It's not as if you eat a bucket full. The sugar salt servings are tiny.
