Max McFarlin The souring agent in the laksa is assam. And the funkiness you were tasting probably comes from belacan (fermented shrimp paste), the blackish sauce which was there before you stirred them into the laksa broth.
6:43 the sour agent is tamarind base. its usually a mixed of asam keping which is a garcinia fruit plant and tamarind paste which is from the tamarind fruit.
The Assam Laksa site always resonate to me because of Anthony Bourdain. 16 years or so ago when he made his maiden visit to Malaysia to film, I had the honour and privilege to attend a tea event with him in a KL hotel. Behind the scene, he is downright humble and soft spoken. I am glad you tried what he did that was served by the same owner.

Oh it's the noodles series! Curry mee with a rich broth and char kuey teow with lots of cockles and pickled chillies on the side plus egg on top are simply the best! 😻
I’m Malaysian living in Ireland for last 19years. I will go back every 2 years and every time I tell myself will eat all the food but just can’t cos the heat. I’m amazed you how much u eat
Air (h)itam translates to "black water". Reckon if I were to live in Georgetown, I'd be well over 300 pounds, too. That Penang white coffee looks interesting. Ipoh coffee started when the Chinese couldn't afford a proper coffee roaster and would "roast" the beans in coconut oil in a hot wok. So kopi ipoh has a subtle coconut presence in the aroma and taste. CKT is one of my favourite hawker dishes. Bad CKT is bad, don't get me wrong- I've had some shockers here in Australia. Decent CKT is great, but a great CKT is transcendent. I would crawl on hands and knees over broken glass for it. And there are multiple variants. My favourite fruit in SEA is mangosteen, but the main season for them is June to August. Looks like a smallish grey-brown softball on the outside. Inside, the fruit is segmented like an orange, creamy-coloured and tastes like strawberries and cream. Don't get the purple liquid on your clothes, as it is there for life, and you'll have to wear off the layer of skin on your fingers! Loving watching these videos. Can't wait to get back there!
The souring agent for asam laksa usually is Garcinia atroviridis, known as asam gelugur, asam gelugo, or asam keping is a large rainforest tree native to Peninsular Malaysia. This species grows wild throughout Peninsular Malaysia but is also widely cultivated, especially in the northern states, owing to its economic and medicinal value. Sometimes, tamarind can be use to. The fish use usually is sardine or tropical sea mackerel.
Thx Max for sharing!! Always love these videos from my home town. Grew up coming to the market most days..."Curry mee home" lol..keep it up.. Watch out Mike Chen and Mark Wein!!! :)

Nowadays many famous street foods arent that tasty as they were in old times, some even decline in quality, a typical example is the Siam road Char Koey Teow, actually some hidden gems are even more worth trying, such as places that only the locals know, I am talking about this baby Char Koey Teow (WaHong Cafe) in Kampung Jawa, super flavourful flat noodles packed with aromatic WOK taste + big fresh fat sweet shrimp, make sure you try it next time, you wont regret it. Little tips: its portion is small, make sure you order extra koey teow & extra shrimp 😋
