The fishing in NZ is fantastic both fresh and saltwater. It's well managed and I returned over 75% of the fish I caught while out there. Got everything from Rainbow trout to a massive stingray.

We call those Amberjack or banded rats on the east coast USA and they are considered a pest. They taste terrible and get in the way of catching good eating fish like snapper and grouper.
Oily fish like amberjack and other jacks are best smoked. But they are good. Americans are not exactly adventurous when it comes to food compared to other countries. Go to Europe or other countries and have your eyes opened up a bit.
Like Binh says, learn how to cook fish. The Australian Salmon is considered by many to be cat food, and I will admit to having tried and given up cooking them. Then I discovered a Thai fishcake recipe that used them in preference to any other fish, and I agree, no other fish compares in this recipe. I might even get around to eating mullet one day.
+ Robert William agree with you, what taste terrible with ourself doesn’t mean it taste bad to everyone. And about the mullet it’s taste great smoke and dip in salty black soya sauce red chlli and a squeeze of lime add sugar to taste or add chilli up to you.

It's actually a different species, although the yellowtail and amberjack are both from the back family
