This is my kind of recipe. It only looks like you slaved away. I have a bit of the shakes in my old age, so I use the Pampered Chef dough scraper and chopper held at a 45 degree angle to level out things like the chocolate. It has a more even bottom and is wider and easier to control. I don't know which came first, the wheel or the parchment paper; but they are the two greatest inventions ever. Number three is the dishwasher. 😃 The peppermint oil that I have was bought at the health food store and is essential oil, peppermint. It has a much better flavor than the extracts & there is a lifetime supply. Another new subscriber.
I use amazon prime so 2 days - locally I get them at a store called Gygi's that is a restaurant wholesale kitchen supply store, rstaurant supply has it too, any store that sells cake decorating supplies or candy making will sell the right chocolate!

Yes you could, this is just my favorite chocolate to use because it gives a flavor the most like the original mints. Pulling the mints out before the chocolate hardens puts you at risk of messing up the layers and the leveling you have already done but it won't mess up the flavor:)

I actually make Andes cookies. But I order the oil ( because I can NEVER find it in the stores) that is creme de menthe flavor. I like that better than the peppermint. Although I love peppermint, the creme de menthe has a slightly different flavor. It's a bit milder and it even smells like the actual Andes mints. green chocolate, I like the merkens brand. You just melt it just like the chocolate layers. I put the three bowls, dark chocolate, green chocolate and dark chocolate in the oven to heat then spread!
