I saved this video to watch with my Mom on New Year's Eve. She's 95 years old and loves your channel, Sage! Just think, she was 8 years old when this recipe was brand new! Your channel is favored by her more some other vintage lady channels because she says you actually do a lot of research and it's more than just showing off period furniture and mixing bowls. So I'm guessing my Mom is your oldest fan! Happy New Year from us in Chicago.
Yesterday's potatoes are much firmer when they come out of the icebox. And besides the scandal of leaving the skins on, the bits of skin gave them a place to break in half. But a fried potato is still a fried potato and one of the best things in the world.
What a great video! Everything looked so delicious. Blessings, Sage and James, as you move house and start a whole new adventure. Happy New Year from the US!
Sage, thank you for filming this holiday special - I truly enjoyed each episode. Anything that involves potatoes is absolutely scrumptious. When I don’t look put together for the day, my husband will tell me I look beautiful. I then tell him I look like a potato; he then says, “I love potatoes” 😂 Happy New Year 🎉
Awww I love this series, I will be sad to see a change in the background but as long as we can still re-watch these videos I am happy x Look forward to the next chapter, Merry Christmas and Happy New Year Sage!
So sad that this is your last video at James' grandmother's house!!! So many memories :( but I look forward to seeing your new house and of course your wedding ♥Happy New Year James & Sage!!!
Ah, your music 🎶starts & you appear & I know it is time to snuggle in & visit with you, Sage! I have really enjoyed your series & hope you can gmod more as you settle into your new adventure! I love the Cooper fish on wall; grew up with one in the 50's on our kitchen wall. My mother used it especially when making a salmon dish, a cross between a souffle & a firm jello texture. Blessings as you pack, move, & unpack. Whew! Thank you for letting us in to enjoy your sweet home & all the projects you 2 made! 😊
Hello down under. First of all, I wish you the best wishes for the new year. Potato croquettes are super tasty, I agree. This is often eaten here in the Netherlands. My tip is to put 1 to 2 liters of oil in a pan (saucepan) and then let them fry for 4 minutes. Then it is even tastier if you eat it warm with mayonnaise. Enjoy your meal
Good luck on your move. Nowt wrong with fried tayets (say she in Lincolnshire speak). As others have said, cooling them a little will firm them up, but they looked pretty darn good to me. Happy 2024!
I think you needed the 3 yolks in those taters. A pound isn't very much! That's like 2-3 potatoes! That would be why they were so soft . Still yummy, just fall aparty!
Thanks again for sharing another amazing cooking episode you never disappoint ❤ just out of curiosity what will become of James’ nans house after you guys move out? I hope it stays a family home if for anything just as a holiday home. Can’t wait for the new videos in the new place be blessed ❤❤❤❤
All of the potao crocette recipes I have seen on other chanels add flour to help firm them up a bit. Maybe try that mext time. So looking forward to viseos from yor new home but I will miss all the wonderful remodels that you did on Jame's grandmothers home. Hope you have a Happy New Year and good luck in your new home and career.
Happy New Year to you and James! You will fix up the new house just as pretty as you did with Nan's house. Wishing you and your loved ones all the best for 2024.
In the USA many of our appetizers are heavy or rich with cheeses. Those little salad canapes would be a welcome delight on any table of snacks. I will absolutely add them onto my next menu. Blessings to you and James as you move and begin to make a new home somewhere else.
I remember my mother making fried potato patties the same way. So tasty. Every Sunday had a lettuce, tomato, celery and cucumber salad with mayo. Thank you for memories and great recipes. Happy New Year to you and your husband.
Happy new years to you and James I will be sad to see your shows from this little house go away but change will be good for you. My great niece already got a nursing job in labor and delivery. Have you gotten a job or C will you wait until you get tithe place you will live
The egg and vegetable mayo in lettuce cups sort of reminds me of my Mom's potato salad--she'd add chopped pickles (gherkins) and a little yellow mustard to the mix. But always, her potato salad contained hard cooked eggs mixed in with the potatoes and mayo. For your Australian summery weather, the lettuce cups would be light and perfect ! Happy New Year to you and James. We all wish you well on your move to your new home !
Great video again! Cool down your potatoes after you mash them and add just a small amount of butter. Also beat the egg whites to coat the potatoes then do the crumb coating.
They both look good I always make potato Croquettes if I have a lot of extra mashed potatoes but I put a little bit of flour in it and sometimes cheese and when I drive coated and I always put them in the fridge to firm up and I never fry them I just spray them with that non-cooking spray and bake them
Oh yay!! A Sage video!! I really enjoy that you are posting more often. Happy Happy New Year to you and James!! Best wishes for wonderful new memories in your new home!! 🎉⭐️🎈🥳💥 (My mom used to make potato pancakes out of leftover mashed potatoes. She’d put in some chopped green onion and if she was being very fancy would add some grated cheese. She didn’t dip them in bread crumbs. She’d put them in the shape of a pancake but maybe 1/2 inch thick. She’d brown them in a skillet with a little butter instead of deep frying them. 😘)
I shared this with my family- this is just the type of thing they like.🥰 I always enjoy watching your videos, even if there's food involved I can't eat, lol. Good luck with the move Sage, hope it's smooth sailing!! I can't wait to see how you decorate your new home in the future 😊 Keep well
This looks so awesome! I really enjoy your videos! Been watching forever! Congratulations on the engagement, and the move to your new house! Cant wait to see all the wonderful things coming your way! Much love ❤️
What is your secret for peeling fresh eggs so easily? I have chickens and fresh eggs. When I boil them and peel them - for deviled eggs, etc., mine always turn out a bit mangled. The white part sticks to the shells and they're just ugly. It looked like your eggs peeled beautifully, leaving the white intact. (I hope all of that made sense). Your expression when you're tasting says it all. My mouth is watering. I'm going to try both of these recipes.
With your croquettes. Less butter, I think two egg yolks for the amount of potatoes you had. Also you rwally need that whole egg on the outside. It seals the potatoes together. I always use panko bread crumbs to roll mine in. Turn your oil down a bit as well and make them about half the size you made. All tips from a much older lady! 😂 Your salad cups looked wonderful! Happy Cooking! ❤
I don’t know how I missed this episode! Hope your new year is going great… try adding a bit of flour or even mashed potato flakes for a firmer croquet and use a whole egg beaten to dip before rolling in bread crumbs. Then croquettes will fry up no problem.
happy new year Sage and blessings for your wedding and new location in 2024, excited to see it all! my gram made potato croquettes from leftover potatoes and did not dip in egg white first. made them a bit smaller and added grated italian cheese to the breadcrumb mixture. maybe you'd like to try it! de-lish
I agree nutmeg and oregano can be pretty overpowering, there’s just so much flavor in a little bit. This looks delicious, I absolutely love these videos. It’s so fun to cool old recipes, there are so many all throughout time. I have a cabinet full of old recipe books, I need to go through them and cook them.
was that romaine lettuce you were using for the salad? I don't know how many different varieties you have in Australia. I made a different kind of canape one year for a sports banquet using crackers and crabmeat. :)
Looks delicious! I think I saw somewhere that if you salt raw potatoes and leave them to stand for a while it draws some of the water out? Might be worth a Google! Happy house move.
Lol may be you should have turned the heat down helps. Also the plant was in the way of frying the potato croquettes but we could just make them out. Bless this house going to miss you. Xxx
I love all your videos my absolute favorite is living in the 19 smth especially the long ones with different breakfast and dinner ideas. I'd love to see some of those.
las papas preparadas de esa forma hay que dejarlas enfriar un rato en el refigerador para que no se desmoronen. En Argentina les decimos bombas de papa y las rellenamos con jamon y queso.

Happy New Year from Pennsylvania, USA. Hope it's a great year for you, Sage, and James.
What a great video! Everything looked so delicious. Blessings, Sage and James, as you move house and start a whole new adventure. Happy New Year from the US!
Thank you so much Kristin! 😊💕
Next season, you should start it by making a 1950s parfait pie!
Tha k you so much for posting this series! Really helps during my down time from work. Howdy from Texas!
Sage, thank you for filming this holiday special - I truly enjoyed each episode. Anything that involves potatoes is absolutely scrumptious.
When I don’t look put together for the day, my husband will tell me I look beautiful. I then tell him I look like a potato; he then says, “I love potatoes” 😂
Happy New Year 🎉
That's so sweet! ❤️ I love that. 😊
You've got a good man
I'm so glad you enjoyed this series! 😊
I can never get enough of potatoes hahahha I love that your husband says that, so cute!! 😂
Awww I love this series, I will be sad to see a change in the background but as long as we can still re-watch these videos I am happy x Look forward to the next chapter, Merry Christmas and Happy New Year Sage!

I wish you good luck, health and many more videos. Happy New Year 2024 from the Czech Republic. 😉
So sad that this is your last video at James' grandmother's house!!! So many memories :( but I look forward to seeing your new house and of course your wedding ♥Happy New Year James & Sage!!!
I’ll miss seeing you and James puttering around this house, but very much look forward to new adventures in your new abode. Happy 2024! 🏡
I think a squeeze of lemon juice would also be really nice in that salad! I call them potato patties, but it is the same concept. They are so good!
Wishing you and James a happy, healthy and joyous New Year! 🫂❤️
Happy New Year to you, James, Maude, and Mabel. Good luck with your move. ❤
The appetizers looked delicious! Sage and James, I wish you many blessings for 2024. Happy New Year!

Happy New Year my favourite historical youtuber! 😊❤🎉
Aww thank you! Happy New Year also!! xx

I find that for molded food (e.g. croquettes, lentil cakes etc) it's best to put them on a baking sheet and freeze them until firm before frying
Are the chickens coming with you to the new house? Is James’ grandma selling the house? So many questions 😂 hope you don’t mind.
I love your videos Sage! My six year old daughter loves watching them with me too 😊
I understand that was your grandmother’s house. Is she selling it? You put in so much work into the home. Why are you moving?
I love your channel, you are so soothing, even when you have a mini panic about potatoes that are browning faster than you anticipated. ❤🎉
😂 hehe thanks so much!
I've seen recipes for croquettes with the beaten egg whites added to the potato. Have a great new year!
I love your videos. Hint on getting them too crisp too quickly. High heat to get to proper temp, turn down to medium to cook slower. :)
All of the potao crocette recipes I have seen on other chanels add flour to help firm them up a bit. Maybe try that mext time. So looking forward to viseos from yor new home but I will miss all the wonderful remodels that you did on Jame's grandmothers home. Happy New Year to you and James! You will fix up the new house just as pretty as you did with Nan's house. Wishing you and your loved ones all the best for 2024.
Happy New Year Sage & James. I missed the episode when you said your moving. Where are you going?
Newer recipes call for some flour in the potatoes to firm them up. I also sometimes use cornmeal in the potatoes and in the dredge mixture. ❤❤❤
And they need to be left in the fridge to harden before coating them
In the USA many of our appetizers are heavy or rich with cheeses. Those little salad canapes would be a welcome delight on any table of snacks. I will absolutely add them onto my next menu. Blessings to you and James as you move and begin to make a new home somewhere else.

I always supposed that croquettes were complicated, but I might give them a try
Happy New Year to you and James from Melbourne Australia..🎉🎉🎉

I want to try this ❤
Happy New Year, Sage! Looking forward to more vintage adventures with you! 🎉
You forgot to apply the KYFFAO method: Keep Your Fingers the F**k Away from the Oil.
Ooh I wonder when Sage will be moving.. I wonder whether she'd make a road trip vlog about the move. That would be great! Happy New Years!

Your potato things look good. I wonder if cheese and herbs, maybe jalapeno inside would be good too...
What's going to happen to your/James' grandma's house now that you're moving? I hope whoever lives there now takes as nice care of as you do..
That looks amazing! I need to try those recipes.
Sage when you and James move what are you doing with Mabel and Maude
I was wondering that myself
We are bringing them with us!! xx
Awesome
Next time set the stove to medium low heat, so if it’s numbers like between 2 & 3. Also, get or buy a splash guard to avoid spattering oil.
Happy New Year from New Jersey. Good luck with the move. Im sure you will make your house a lovely home.
Happy New Year. I hope it brings you and James success in the New Year 🎊
Your videos are so cozy, I just love watching them!

I love putting stuff in a romaine piece, so good. Potato looks yummy too, might want to turn down the heat next time lol

You could try setting the potato croquettes in the fridge to set up before you fry them. That might help.
