Yesterday's potatoes are much firmer when they come out of the icebox. And besides the scandal of leaving the skins on, the bits of skin gave them a place to break in half. But a fried potato is still a fried potato and one of the best things in the world.
Hello down under. First of all, I wish you the best wishes for the new year. Potato croquettes are super tasty, I agree. This is often eaten here in the Netherlands. My tip is to put 1 to 2 liters of oil in a pan (saucepan) and then let them fry for 4 minutes. Then it is even tastier if you eat it warm with mayonnaise. Enjoy your meal

All of the potao crocette recipes I have seen on other chanels add flour to help firm them up a bit. Maybe try that mext time. So looking forward to viseos from yor new home but I will miss all the wonderful remodels that you did on Jame's grandmothers home. The egg and vegetable mayo in lettuce cups sort of reminds me of my Mom's potato salad--she'd add chopped pickles (gherkins) and a little yellow mustard to the mix. But always, her potato salad contained hard cooked eggs mixed in with the potatoes and mayo. For your Australian summery weather, the lettuce cups would be light and perfect ! I don’t know how I missed this episode! Hope your new year is going great… try adding a bit of flour or even mashed potato flakes for a firmer croquet and use a whole egg beaten to dip before rolling in bread crumbs. Then croquettes will fry up no problem.

With your croquettes. Less butter, I think two egg yolks for the amount of potatoes you had. Also you rwally need that whole egg on the outside. It seals the potatoes together. I always use panko bread crumbs to roll mine in. Turn your oil down a bit as well and make them about half the size you made. All tips from a much older lady! 😂 Your salad cups looked wonderful! I agree nutmeg and oregano can be pretty overpowering, there’s just so much flavor in a little bit. This looks delicious, I absolutely love these videos. It’s so fun to cool old recipes, there are so many all throughout time. I have a cabinet full of old recipe books, I need to go through them and cook them.
I remember my mother making fried potato patties the same way. So tasty. Every Sunday had a lettuce, tomato, celery and cucumber salad with mayo. Thank you for memories and great recipes. Happy New Year to you and your husband.
They both look good I always make potato Croquettes if I have a lot of extra mashed potatoes but I put a little bit of flour in it and sometimes cheese and when I drive coated and I always put them in the fridge to firm up and I never fry them I just spray them with that non-cooking spray and bake them

Add a little flour to firm up the potato. I make potato pancakes for my hubby all the time from leftover mashed potatoes. Just add an egg and flour then place in the oven on a greased pan.

Hi Sage! If you chill the croquettes down in the fridge after you roll and crumb them they should be easier to fry. It’s a great way to use up mash if you have any left over from dinner. Love watching your videos ❤

I find that for molded food (e.g. croquettes, lentil cakes etc) it's best to put them on a baking sheet and freeze them until firm before frying

Newer recipes call for some flour in the potatoes to firm them up. I also sometimes use cornmeal in the potatoes and in the dredge mixture. ❤❤❤
And they need to be left in the fridge to harden before coating them

I love your videos. Hint on getting them too crisp too quickly. High heat to get to proper temp, turn down to medium to cook slower. :)

If you invest in a ricer it will mash the potatoes and remove the skins at the same time. Everything looked so good.
I always supposed that croquettes were complicated, but I might give them a try

You could try setting the potato croquettes in the fridge to set up before you fry them. That might help.
