The Si Hui Peanut Bun resembles a large glutinous rice ball, but it's not as sticky because its outer layer is made from a blend of water-milled glutinous rice flour and water-milled sticky rice flour in a 5:1 ratio. The mixture also includes peanut oil and white sugar. The filling is primarily roasted peanut crumbs mixed with white sugar, and you can add some sesame seeds or coconut flakes for extra fragrance. From the skin to the filling, it's aromatic and sweet. In Si Hui, it's also common to use preserved mustard greens and pork for a savory filling.
Peanut Bun Recipe:
*Dough Ingredients:*
- Glutinous rice flour: 500g
- Sticky rice flour: 100g
- Peanut oil: 30g
- Sugar syrup (boiling, containing 50g sugar): 300g
- Cold water: 90-120g
*Filling Ingredients:*
- Peanuts: 200g
- White sugar: 100g
- Sesame seeds: 50g
- Coconut flakes: 30g
- Sesame paste: 30g
- Butter: 20g
