I grow Japanese eggplants. When I harvest them I store them on the counter but sink the cut edge into water which helps them retain their turgor pressure. Even days later they taste like they've just been cut from the vine. Enjoy!!
Lol for the varieties that produce a smaller variety. For eggplant i look for the Chinese snack long eggplant, or the smaller egg shaped ones. Same for tomatoes. Try having a pot that can also hold enough soil like 2 gallons. This will aid with watering. Only plant what you like to eat. You can also grow fruits in pots on your balcony. I have even grown apples, gooseberries and starwberries. Mmm. Good luck.

Im trying to grow eggplant but the drought and heat are taking their toll and stunted their growth (and one was left a bit pitted) should i have mulched them or put garden mesh on them to help retain moisture in the roots?

I made breaded eggplant and fried it (like a chicken cutlet) like you’d have with eggplant parm but I cut them really thin and my husband loves it that way. Also if you go to this guys channel he has a video of how to make an eggplant dip almost like a hummus which looks really delicious.
Cut them in rings put some salt & vinegar and let it sit for about 30 minutes than rinse them & fry them individually into flower and eggs, my best way to eat them

65 to 80 days after being planted. Is that from a seed or from a pregrown pot? How long does it take from the time there's a vegetable sprouting to be become ripe?
İf you do nit want your eggplants bitter you can dice them up put them in salty cold water in 30 min. Then squeeze the water out of them and use them in your food, the water they were in wil turn brown that is the bitterness

Just grew my first eggplant. Grilled it on the BBQ with mushrooms and onions.

We used to dust the plants with wood ash from our wood cookstove, to stop bugs from munching out on the foliage.
