I followed your recipe and while the ice cream flavor itself turned out really well, I found that the density was more of a hard frozen cream, than a soft, smooth and creamy texture. In a nut shell the "ice cream" itself was difficult to cut through like store bought ice cream cakes. One observation was very clear when I served the cake to my guests, and it was just too darn hard for people to run a spoon through the ice cream. What did I do wrong? What do you recommend I try next time to make sure the ice cream itself doesn't end up rock hard?

Yes I know it does. That is part of what I mean. As he doesn't eat it, except the taste that we see, that is why I wondered. I wasn't being crappy, it is a genuinely curious question. I have the same thing if I eat a more indulgent food after a while of not eating it, so I was wondering if the same happens to him. does it work if you use melted chocolate instead of purrated strawberry?
I have the same thoughts. What i will try is to put melted choclate on top with little strawberry-pieces in it.
