Your local Asian Grocer should have the pickled mustard greens. Kim Chi is actually very different flavor because the pickled mustard greens aren't spicy, but they have a slight horseradish flavor. As all good mothers and home cooks do ... cook what you have not what you wish you had.
I went to three different Asian grocery stores without any luck :(

Oh man I make chili oil the exact same way. It gets used throughout the week since, knowing I have it on hand - totally influences the meals I make lmao.
Also whenever I hear mapo tofu, I can't help but think of Food Wars.
the food looks amazing, but whats more impressive is the combos IRL; i cant even do any if that one after another.
At this point, there is one thing we can take away from the recipes…is that if you have green onions in it, they are not optional.

Creative idea on making congee using cooked rice , i learn something new, tbh our way is a bit different per say which includes soaking them overnight in water and cook the rice to congee ......
You could also pickle your own mustard greens... It's not hard. It just takes time.

I love your Anime food videos but I miss your Anime reaction videos too, I first found you by watching all your food wars reaction vids. I've watched like 30 reaction vids of people watching the One Piece live action since it came out and was wondering if you will ever do Anime reactions again? Campfire cooking in another world was fun, and there is a new fantasy cooking Anime coming out soon called "Delicious in Dungeon" that looks rad. If I remember you had to stop doing reactions because of youtube but these days I see soooo many reaction videos maybe they have eased up some since on the reaction vid rules?

And hot over Chilliflakes (medium hot cuz U dont wanna have pain when you have to release the Power of food 😂) and fill additional tsps if you gonna jar it. So U get rosted flavor and kinda fresh one in...
