How to Make the Best Meatloaf

- By request, here's how I make meatloaf.
Meatloaf
2 lbs. ground beef
1/2 cup crushed saltine crackers
1/4 cup ketchup
2 eggs, beaten
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 tsp. salt
1/4 tsp. thyme
1/4 tsp. marjoram
another 1/4 cup ketchup
Preheat oven to 350 degrees. Combine ground beef, cracker crumbs, 1/4 cup of ketchup, eggs, onions, peppers, salt, thyme and marjoram in a large bowl and mix well. Shape mixture into a loaf. Bake at 350 for 45 minutes, remove from the oven and spread the remaining 1/4 cup of ketchup on the meatloaf. Return meatloaf to oven and bake for 15 minutes more. Enjoy!

I cooked it and it came out just fine. This is the meatloaf I've been looking for for sure. The taste is great. Nice and moist. Tell your wife I said thank you and I'll continue using her recipe always!!!

I made this meatloaf on Thursday night. I used some bread that was lower in carbs (Sara Lee 45 calorie) and mixed Heinz 57sauce with my catsup. This was the best meatloaf I have tasted in a long time. I also use no sugar catsup. Wow. Thanks to you I now like meatloaf again. Glad you're back and you're right, you two need time for yourselves. Take some. I liked the paste tomato for soup. Richer tomato flavor. Take care of each other.

HI sis, and Bobby:) I made the meatloaf tonight it was so good! I used some garlic powder instead of marjoram and added some green peppers with the red peppers. My hubby loved it, feed my parents, they loved it. Thank you so much. The house still smells so good,

I haven't made meatloaf in so long I forgotten my mothers recipe. Out of all I posted this is the one that is the closest to it except I added a little oats and my pepper was green so Thankyou so much for posting. My boyfriend has never ate it and I plan on makinkung for the family:)

I use a similar recipe and cook mine in the slow cooker. Takes a little longer, but comes out great.

I just made this for my family literally the best ive ever eaten i put more onion and red bell pepper in it and how to substitute with oregano with that was seriously the best meatloaf I've ever eaten in my life

I use a package of onion soup mix with a spoon of HP sauce, a tiny splash of Worcestershire sauce. 3/4 way through cooking I add a very light glacé of ketchup.

aside from the type of ground beef, I think that may be what makes this so good.. am definately going to try it, every recipe susan as posted here is very good.
Yep, that's exactly why I'm trying it. I love her recipes. Only one problem, I made her cinnamon buns, and now my family drives me crazy to make them all the time. LOL they are SOOOOO good!
I want to try those doughnuts, just have not had time to do it. Her cabbage rolls are awesome as well!

really... another thing you can is layer the ingredients into a casserole. a friend taught me that, his grandkids dont like the cabbage (same with stuffed peppers) that made it easier for them to pick it out :) we used have have a friend from germany, she made them as a casserole she said it was just easier, mine turned out very good, I always drizzle with a little bit of franks kraut juice and serve with sour cream... now maybe have to make some, getting hungry... power was out this morning, so am up early..

Hello, my family really love meatloaf, and if they had it there way,, they would have it every day!!!!! I love making it, and its so verisitile, as you can change it each time if you want, and ring the changes, to mabey a curry flavoured one served on rice, or spicy,that meatloaf looks so tasty that you made, take care
IT LOOKS VERY MOIST & DELICIOUS
Pretty close to mine too.. I use a jar of Rotel (make my own) instead of the ketchup in the mix.. but I do the ketchup on top like you do. Yum! One of our favorites too!
I've added salsa to meatloaf before and that works out pretty good too. This recipe is more of an everyday type of meatloaf.
Next day meatloaf sandwiches with pickles and lettuce are very under rated.

Looks a lot like the recipe we make at home. But I've always cooked it in a mold, I really like the way you pre-shape and cook it. Looks delicious!
The grease drains off to the side on the foil if you don't put it in a loaf pan. Much better!
it is just like my recipe except for the thyme and majoram will have to try that for sure..I knew mine was missing something! thank you

that's what I was thinkin is those two may add the missing flavors.. I use bread crumbs, will try the crushed crackers instead. all of susans recipes have been great.

One time tried a can of Rotel in mine and I had put milk with the breadçrumbs. Let's just say Rotel and milk not a good mix.

Bobby says he thinks the peppers are the reason it turns out so well. He thinks they add moisture to the meatloaf.
Now I'm going to try this recipe, it just looks delicious! And when I seen Bobby eating that meatloaf, I just wanted to stick my head through the screen and ask you to fix me a plate ... LOL .... Your husband is right, girl you can COOK! :-) Thanks for posting!

Susan: I never thought of using majoram or thyme in meatloaf. Actually to be honest I don't think I have ever used majoram in any dish as fall as I can remember. This comes under the heading of learning something new everyday. I agree with others about how great a meatloaf sandwich is. Glad to see you back! Bernard
It's good to be back. The spices aren't overwhelming in this recipe. It adds just a hint of flavor. I have a tuna casserole recipe that uses marjoram.

hi Nancy, mark here.. ,love tuna melt, but the boxed stuff to me just don't taste good anymore? don't know if its due to getting older or what.. I don't keep the boxed stuff in the house, but have noodles stored and cream of mushroom soup and tuna but something is missing in it..
have you tried Susan's chicken salad?? that dressing/sauce for it works very well for tuna salad and mac salad, mac salad I just add a bit of grated onion and cheddar cheese. but got to let it sit in the refrigerator for at least 1/2 a day to get the flavor. that is my favorite now.. easy easy to make.
That is my momma's recipe and I've racked my brain trying to remember it! I've tried and tried to recreate it but to no avail. I bet I make it next week though :)

Bobby sure loves that meatloaf. Another favorite of his is white chili. He says he could eat that twice a week. I made a video of that recipe a long time ago.

Yes Ma'am, have to agree, your meatloaf recipe is the very best. Made it for my family, and we all loved it (even our mini-doxy could not eat her little onion-free chopped up mini-loaf as quickly as she could...she thinks she is 'human' and is sooo picky!) Rarely have I made a recipe that could not wait to make it again...well your meat loaf is the exception...it really is THAT good. Thank you for sharing this recipe. :) Mrs. Tc

I'm one of those people that hates sticking hands in messy stuff like that. I use a gallon sz ziploc bag to mash it up & form the loaf. Then I just rip the bag up the sides and plop it on a tray. Gonna have to try your recipe 'cause every time I make meatloaf it comes out different. lol
I've tried using a ziploc bag before but I just can't seem to mix it up very well that way. I must be doing something wrong.
I don't follow a recipe either (drove my family crazy, as they said I'd get it perfect, then go and change it tryin to make it better. My oldest son (always said "Mom, you can't make perfect better" is now off in the Air Force for over a year now, and the youngest just left for college, so I only have hubby to torture lol). So that's why I want to give this recipe a try!

Looks delicious except for the thyme and marjoram, Except for those ingredients it is the way i make mine. For some reason though yours looks prettier LOL must be the love you put into it. However, now I am very hungry for meatloaf!

mhpgardener looks good, I just made Susan's peach cobbler last night. first time I made it we loved it so much I went to my farmers market to get another bushel of peaches just to can her pie filling so I could make this cobbler fast. sooo yummy! I am thinking of making this in several loaves, ask susan if she has tried freezing it and warming in the oven or freeze it & then bake?? Thanks you guys
yurdreamwoman I haven't made this particular recipe yet (although I am going to!) but I have pre-baked and frozen my own recipe before. I just re-heat it in the oven, and it's as good as the day I made it. I almost always make up enough for an extra 2 to throw in the freezer for busy days, or days I'm not feeling up to cooking.
its good! made it a number of times how,and I didn't make good meatloaf before, something always missing. I do use 1/2 ground beef and 1/2 ground chuck in mine thats the only thing I change.
Made this for dinner last night and have to say this truly is the best meatloaf I have ever made. Very flavorful and turned out fantastic. I had about 1/4" cup of pepper and onion extra I threw in but that was the only change from your instructions.
I used a combination of 1# ground chuck, 1# organic ground beef, both being very very low fat there probably wasnt even a tbs of grease cooked out of it and it certainly was not dry.... enough left over for today too.

Almost exactly like my Mom's recipe, Mom added garlic. I agree, it is the best meatloaf. My siblings named it, "Mom's Blue Ribbon Meatloaf" and they're picky eaters and hard to please! My young grandson was over for dinner, when I served meat loaf and he loudly announced, "Mmm, this isn't meatloaf! This is meat cake!"

Will certainly have to try this, have an oven now... What type of ground beef do you use (fat content)? I use ground chuck for most things, chili, cheeseburger casserole, etc but there is hardly any fat in what we get from the meat processor. flavor is good though.

I think that Bobby could use a few more pounds. He works it off as fast as he puts it on.
Lol, just wait, I have a brother who is 6 foot something and always was as skinny as a rail, ate like he had a hollow leg too, when he hit his 40s, he started gaining weight, take care of yourself and have a blast!
