I was a Deputy Sheriff and for my first year I worked in the jail. Big jail. Old fashioned country jail. Big old fashioned country jail. Every Thursday they served meatloaf. The Trustee would bring the chow cart to me with all the individual food trays on it for the tier, and I'd wheel it to the cells. (County jails feed inmates in their cells - we don't have lunch rooms.) Well, sometimes a few inmates don't want the food for a variety of reasons. We Deputies were allowed to dine on any trays not accepted - otherwise it would just be thrown out anyway. I was young and single, living alone - nobody was cooking for me. I was very happy when an inmate declined the chow - it saved me money and the food was good. Always good. But the meatloaf was the best. I got the recipe and I still make it that way 50 years later. Don't forget 1/4 cup Ketchup & 1 Tbsp mustard. Coat the top with ketchup, lay down a few strips of bacon. the rest is the same as shown here.
I made five pounds of meatloaf about a month ago, with the goal of a week or more worth of meals. After about four days the meatloaf had started to dry. I had about two pounds left and couldn't eat another meatloaf sandwich. Not wanting to waste the meatloaf, I started thinking.... A light bulb popped on! Beef stew! I made a stew, sans meat, in a crockpot, diced the meatloaf into 1" cubes and added the meat about one hour prior to finish. Most of the cubes held together, but some dissolved, infusing every bite with meat. The meat lacked all of the negatives of stew meat: It had flavor, and wasn't stringy or tough. It was the best beef stew I've ever had! I think that might qualify as "prison-style" beef stew!
I was in county jail, solano ca. food was good in the 2000's then ARAMARK ruined the food, 1 dollar a day to feed an inmate. After 2001, never saw any good food. GARBAGE>Thank god I went to San Quentin.
When i was a kid my mom would visit me at lunch time sometimes and she tried a few bites of the school lunches every once in awhile and she always said that the school food was worse than the food she had when she was in jail :P
Another funny detail about Washington jails, my dad had been part of a work detail for awhile in prison and he said that they used to pick up roadkill for the prison kitchens all the time. It also wasn't uncommon for the cooks to find pieces of plastic, metal, and glass in the meat while they were processing or cooking the "meat".

I made this without adding parmesan (too expensive where I live) and I added 1/4 cup of diced red bell pepper I just sautéed together with the onion and garlic. Came out great and juicy, not dry at all. My mom had three plates of it lol. Thanks! :)
nice recipe. I make my meatballs this similarly, but if you want to make it healthier, replace half of the bread crumbs with zucchini (asian style are the best since they are not bitter). Just use food processor or dice manually finely. They give out lots of water while cooking making meatballs/loaf super juicy and a lot healthier.

I made this tooday. Oh, I used very lean ground beef and regular ground pork. Threw in the splash of worcestershire. Made it this morning, actually, and put in fridge, cooked when I got home from work. I used whole wheat bread crumbs, because I dry out heels and so forth, which turned into beautiful crumbs. I forgot the parmesan. I used a combination of ketchup and a very mild salsa for the glaze. It's moist and delicious. Hub loved it with mashed potatoes and gravy and steamed veggies. Thanks, Food Wishes! Even though I am incapable of following a recipe, this is a great jumping off point!

A Shank generally is a term for an object. So you can shiv someone with a shank, but not shank them with a shiv, kwim?

I tried this with ground turkey (85/15). I think the tomato sauce with the turkey was a little overpowering for the turkey flavor (beef holds up better), but good lord was the meatloaf moist and delicious! Your recipe is a home run! Thanks!

It would be quite simple to substitute the breadcrumbs with crushed ramen. You could also slice up some Slim Jims and add them to the recipe. Oh and if you want to get fancy, use crushed Doritos for added flavour.

There is nothing “prison” about this if ramen noodles aren’t involved.
It would be quite simple to substitute the breadcrumbs with crushed ramen. You could also slice up some Slim Jims and add them to the recipe. Oh and if you want to get fancy, use crushed Doritos for added flavour.
