    Recipe:
    1. Soak 2kg boneless beef shank in water for 1 hour.
    2. Pour out the water.
    3. Pat dry the surface of the beef.
    4. Stir-fry 70g salt and 10g Sichuan peppercorns with low heat (no oil needed) until you can see smoke and the salt turns slightly brown.
    5. Pour all salt and Sichuan peppercorns to the beef. Make sure beef is fully covered by salt and Sichuan peppercorns. Put it in fridge for 24 hours.
    6. Move the beef to a deep pot. Add 6 spoons of white wine, 5 spoons of sugar, 1 Tsaoko cardamom (break it), 3 star anises and 5 bay leaves.
    7. Add water until it covers all beef. Heat up the pot until the water boils.
    8. Remove the blood foam then put on the lid and cook for 40 minutes.
    9. Get the beef out and let it cool down.
    10. Thinly slice the beef and enjoy!
