  • What's good BKC Fam! We're doing something special this time. I got a Dry-Aged Chuck Roast from Porter Road and this thing was amazing! I decided to smoke it brisket style on my ‪@Char-Griller‬ Gravity 980 and the results were fantastic. I seasoned the roast with Montreal Steak Seasoning from ‪@McCormickVideos‬. I used lump charcoal from ‪@thegoodcharcoal‬ and post oak chunks for a great smoky flavor. I used my MeatStick X from ‪@Themeatstick‬ for the perfect internal temperature.     Recipe
    1 Dry-Aged Chuck Roast (2.5 pounds)
    Montreal Steak Seasoning
    Peach Butcher Paper
    Season the roast on all sides with the steak seasoning. Load your smoker with lump charcoal and post oak chunks and set it to 225 degrees. When you have clean smoke, add the roast to the smoker. Use a probe thermometer to keep track of the internal temperature. You can spritz the roast with an apple cider/water mix if it appears to be drying out. When the roast has set up the bark to your liking, wrap it tightly in butcher paper and return it to the smoker until it reaches an internal temperature of 203 degrees. Remove the roast from the smoker and wrap it in a clean, heavy towel and place in a cooler to rest for two hours. Slice against the grain and serve.
