I have made biscotti for way more than fifty years and have never seen them made in a sheet pan like this. I will give it a try. I love the candied pecans.

Biscotti’s are the best. I make mine with white chocolate and cranberries. They also last for awhile in an air tight container. A great cookie for Christmas.

Gotta make this recipe. I've made biscotti many times. What I would do is split two half dough portions on two cookie sheets, flatten out narrower, so the cookies are shorter. Thankyou, and THUMBS UP!!!
I use Almonds in mine,have never used pecans..will have to try that way sometime, its definitely NOT what my Italian grandmother did...thanks for recipe...love the addition to orange, but not what my family would expect in Biscotti and I'm Irish more than Italian, lol

Biscotti Cookies with Carmelized Pecans Full Recipe Written below; See Preheat Your Oven to 350 deg. Fahrenheit Candied nuts: 2 cups chopped pecans 1 cup sugar 1 teaspoon vanilla 1/2 cup butter Biscotti dough: 2 cups sugar 1/2 cup melted butter 4 Tablespoons orange zest 4 eggs 1 teaspoon vanilla 2 teaspoons baking powder 1/2 teaspoon salt 4 cups all purpose flour (plus more for dusting) Preheat oven to 350 degrees To make candied pecans, combine in skillet 1 C granulated sugar, 1/2 C milted butter and 2C chopped pecans. Turn nuts occasionally with stove on low till nuts are carmelized and sugar turns light brown color. Pour onto parchment lined baking sheet, and flatten to cool. To make dough, 2 C sugar, 1/2 C melted butter, 4T orange zest to large mixing bowl with paddle attachment. Beat till creamed. Add 4 eggs, and 1 teaspon vanilla. Scrape down bowl. Add 2 teaspoons baking powder plus 1/2 tea. salt. Add 4 C all purpose flour to mixing bowl, and mix thoroughly combined and scrape bowl. Clean up paddle attachment, and chop up cooled pecans and add to bowl and mix again till just combined. Divide in dough in half, place both half quantities of dough on 2 cookie sheets lined with parchment paper and pat with hands. This is where I recognize the cookies are way to long, and should be half sized. Bake at 350 degrees for 30-35 minutes rotating half way in time. Let cool 10-15 minutes. Cut on diagonal on cutting board. Transfer back to sheet pans and bake 8 minutes, remove from oven, flip cookies and bake another 8 minutes to dry out the moisture. Cool in pan, remove and cool completely on wire racks. .
My favorite is hazelnut biscotti. But hazelnuts are too expensive! I use walnuts instead & add hazelnut oil to the recipe. If I candied them, as in this recipe, I'd use the hazelnut oil in that mixture too. Not quite as wonderful as toasted hazelnuts, but very good.
