I am just a beginner at this art form. But all I can say is, shoot whatever you want to shoot on the streets. There are really no rules or guidelines that you should stick to. Regardless if people say "it's not street photography." As long as you are having fun, that's the most important thing. So, get out there. Shoot anything that catches your eye. And have fun shooting.
Do you want to edit your images or products or any photographs ? like bg remove / change, dresses color change, body, face retouching amd more & more..
I'm not comfortable that taking a photo from slightly behind is okay without permission. I think I could identify every person in your example photos if I saw them again and would know identify them immediately if I knew them from before. How does this protect their privacy? What I see my spouse in your photo on Facebook being somewhere they shouldn't have been?
Respecting privacy is crucial in photography. If identifiable, it’s best to get consent before sharing photos publicly. For professional or shared content, using model releases or blurring faces can help protect individuals’ privacy. Always consider ethical implications and local laws regarding privacy when photographing people, especially in recognizable situations.

Public=no privacy.
Yea but you still gotta respect people's space even in public
