    Great combination! Frittatas are a family favorite in my home. My kids and husband start circling me in the kitchen when I whip one up with the weekend leftovers on a Sunday morning. This is sooo easy and flavorful! I love goat feta cheese in my spring omelets with spinach, shallots, and mushrooms. In the U.S. (unlike other countries), I need to be careful when buying my feta cheese and make sure it is goat. :)

    This is is like a pretty simple recipe that I can follow and most definitely make for my Mother. Plus the ingredients are simple and very healthy.

    My mom is Italian so I grew up eating fritatas all the time and didn't know they were called fritatas. Potatoes and eggs were usually what she used. Zucchini and onions she used a lot too, but I have never thought of putting them all together. This looks great, Chef John.

      Melissa Turner On the side, please. A frittata has unique sweet taste of its own. Prosciutto "brazoot" is salty and overpowering. This is a classic vegetarian Italian lunch or brunch dish.

    Thank you so much for teaching me how to cook! I have watched hundreds of your videos and have learned so much!. I've made several "chef john" recipes for my family and every single one has been a huge hit... especially the carnitas, just the perfect bite of food :-). Even my five year old daughter loves to watch your videos and is already learning how to cook excellent food.
    Anyways, my wife and I are total foodies and really do appreciate your channel. Can't thank you enough for sharing your endless culinary knowledge with all of RUclips. I will always....enjoy:-)

    Aww thank you Chef John! Love the reference to Moms giving birth as I am a Mom and while it is hard work I love my baby! (he's 45 and probably won't be cooking this for me but you never know--I posted it on fb to tease him with the idea and we will laugh about it).... what a wonderful versatile and easy dish!     Today (2017 June 18) I made this frittata, but since it's Father's Day, I made one small change: I added a little crumbled bacon (smoked streaky bacon). The result was very nice. I would definitely make this dish again.

    I'm writing these comments as I eat this dish. We made this dish as directed, except we grated the zucchini. As it cooled, my elderly dad wandered over and asked for a sample. Dad has always been a meat-and-potatoes guy; according to him, vegetables come only in cans. Nevertheless, he gobbled it down and pronounced it "delicious". Complete success: everyone loved it. Merci beaucoup !

    This recipe is likely going to come in handy for me. I do gardening and have chickens, so using the surplus of jalepenos, eggs and zucchini will be good here.

    I use those bagged breakfast potatoes they sell at the grocery store and they are already ready to go. As long as they aren’t frozen I just take a cup and throw them in my mix with whatever else and saves so much time of cooking potatoes

    I love this...its definitely one of my favorite brunch dishes! For a long time I would not even try goat cheese but I finally did and it's delicious absolutely delicious and one of my favorite cheeses! So flavourful.! Great dish...xo hydie

    I make something like this on occasion when there's leftovers, but here we call it 'borenomelet' or 'farmer's omelette'. And I use less egg. But I like to add some crispy bacon bits or orther meat to it as well.

    Love frittatas. I made a strata on Sunday brunch with salad, cause I had ciabatta bread going stale and let the strata sit in the fridge overnight before baking it.

    This looks like a candidate for a vegan version (not for myself you understand but for my brother and my daughter’s boyfriend) where you use chickpea (Gram) flour stodge in place of the eggs. You have to mix the veg with the stodge out of the pan and then put it in the pan to cook/grill, I will give it a go.

    Ooooh man, I really want to try this. But I don't think I have any oven-safe pans. Are there any alternative methods to cooking this besides baking and besides flipping?

      Andrew Forrest Transfer everything into any oven safe dish (pie dish, meatloaf pan, casserole pan, cake pan, etc.) for baking. Should work the same.

      Andrew Forrest I personally just flip the "omelette" in the pan and bake the other side. It works just fine afcter some practicing. You will find only pan frittata recipes on yt: Gennaro's sweet pepper frittata woulkd be a nice example.
