    Ive been reflecting on my life alot lately, asking myself what my purpose is, why im here, how to find happiness, etc. And i keep coming back to feeling like i belong away from most of society, away from concrete/big citys/towns.
    I know im happiest when im in the woods living on my own, relying on only myself. The only thing thats keeping me from doing what i want to do is the financial aspect

    • @KeyWestWaterman
      @KeyWestWaterman  2 года назад +40

      I can't tell you how relatable this is for most people. if its a feeling that's hard to fight its worth exploring. and as far as finances, I think that's the biggest issue we all face when making a jump to something new. but if it helps, it took me about 7 years here to get financially "stable" working paycheck to paycheck the majority of the time. One of the hardest things I've ever had to do. but it was worth every second. if you want it bad enough you will find a way. but if there is one thing I've learned along the way. its that there is no price tag on my happiness or my time freedom. The money is an after thought when you truly love something.

I’ve got a little place in the mountains on a lake and very isolated from the stupidity that is normal USA today. Tons of game around me, fish, water, sunshine-electricity. I’m looking forward to retirement if this f-Ing state doesn’t tax me to oblivion.

Thank God we are going into March soon and things this week are looking beautiful and warm. I love eating mangrove snappers. When I was a little boy I loved to watch Flipper. That was it for me. In Fiji we fry fish whole all the time.
    I always struggled with the skin coming off and sticking to the pan. Until I was told by an uncle that my oil was not hot enough and I put the fish in too quickly. He described it as though you want the skin to almost sear as you slowly let the fish into the oil; tail first and then slowly up until the head.
    Worked like a charm and haven’t had a problem since.
    Great simple video! Thanks man.

      Hot hot pan with plenty of oil, almost smoking hot, then gently place the fish in as you described and immediately turn the heat down to medium low. Then with a flat spatula add even but not hard pressure to the whole of the fish/fillet for about 15-20 seconds. I like the skin as well and was taught this technique.

      If you ever get down there, we did a trip in Biscayne Bay with the National Park Service and because the water on the Atlantic side was so rough, we snorkeled in the mangroves. It's a nursery for all the big fish and fascinating to just lay still holding onto the roots and all the fish get used to you and swim out. Thousands of fish!!! Snappers, barracuda, etc etc. Baby barracuda are so cute! They look so cocky and badass but they are just babies. 😆

I find when frying whole if you get a serrated knife and trim the top and bottom edge of the fish (start at the head, run the knife all the way to the tail, so you have a just a bit of exposed meat) it creates a wonderful crunchy little bit of meat and also removed the fins so easier to scale, eat, and cook. Can't believe you have a "backyard" like that! And those mangroves are so fishy! I also appreciate how you respect the environment, great video as always 👏
    As for frying the fish, I like to heat the oil a little bit more and use a deep pan (to minimise splash) and don't cut grooves in the flesh, drop them for a few minutes, like 5 or 6 minutes that way the outside gets crispy and the inside stays moist and tender and they don't absorb as much oil.

    Couple tips from Palau: Make the "slit" one continuous line from near the head to near the tail-- the cut should be slanted in towards the belly cavity and without cutting the belly bones(very important). Apply the flower immediately after salting and let it sit until the flower starts to look "wet" before going into the pan. Your pan needs to be hotter at first so turn the heat up and keep it up until the pan heat recover from the cooling effect of wet fish then turn it down to med heat and let the first sides cook with out moving. Turn the fish when it releases from the pan (usually only the edges of the fish will stick). This will give you fantastic skin crust. You can add curry powder to the flower (about half and half) and serve with limes . Coral trout, groupers, and all snapper and emperor are best for this. It's also essential to a good product if you choose fish with fat deposits In the belly and organs--- this is most important for snappers. Such fish are tender and keep their shape when you cook them. You may have noticed that sometimes when you cook a fish on-frame (whole) it contorts and the skin curls up an turns the fish inside out--- the ones with belly fat won't do that. More is better, even a little counts. But it there is no fat at all and the fish look skinny eat it raw. Love your channel, you have lots of fans out here in the Pacific

    Great video, love the awesome catch and cook. Where I'll give you a tip is on the frying, get a deeper bigger skillet or pan. What you want is to basically have enough oil to cover the one half of the fish you put down, while with a spoon you scoop some of that same oil and you bathe the side thats up with the hot oil. you want the oil to be hot not medium hot. after 3 minutes on one side you flip it over and do the same thing. you end up with very crispy skin and delicious fish.
