In Bridge Commander, the Sovereign's weak-point are the hit-boxes for the impulse engines.
Fire elsewhere, and the damage is generally split across a few systems, but focus on the impulse drives... and if you can get through the shields, the Sovereign will quickly lose maneuvering power.
Is that enough for the Lakota to prevail? Unsure. But in that last fight, you struggled because the Lakota got through your dorsal shields and actually did damage to your impulse drives. Not directly, but close enough to turn the Enterprise-E sluggish.
Food for thought, if you ever want to try again. Don't target the Sovereign's sensor dish or shield grid, target the impulse engines. That will yield you an advantage faster.

@@kavinskysmith4094 The Defiant is a skirmisher; they were supposed to be fighting in groups, using swarm tactics, not going one v one against much larger ships, it's just Sisko and his Pimp Hand ignored that fact.
Offensively, the Lakota is not a weak ship, but defensively it's still an Excelsior class, which is a hundred-year-old design by DS9.
The Sovereign is the closest thing to a battleship Starfleet has (I'd argue the Prometheus but that's an aside). The most modern hull-design, weapons, shields and armour that Starfleet can come up with.
The Lakota can deal the punches toe-to-toe with a Sovereign, but is going to come up short in the durability department, aka a glass cannon.

@@deaks25 This is probably just hole in the fictional story. Once you had a space ship the size of an excelsior, you could modify it just about any way you want. The structure doesn't need to be made from newer super alloys to support the shield generators from a galaxy class. You've got room to install them. Just like quantum torpedo launchers. Granted you would eventually run into some kind of limitation. But even if maneuverability was a problem, the engines could be upgraded. Kinda like how we could could take some big 1960's Ford boat of a car, and make it comparable to a modern car with a lot of work. It will never be quite as nice, but you could make people say "Eh, I don't mind it". And it would be and easier and faster than building a new car.

@@RetroBadgerGaming According to Frakes, Paramount nickel and dimed everything through out the entire TNG era. For example, the Cardassians never got another cruiser class ship after the Galor because they wouldn't pitch in for a new model. So for "Defiant" and "The Die is Cast" for Season 3 of DS9 they created the Keldon Class but giving a Galor model a backpack and some cool fins on the tail. It looks good, but like the Excelsior, best they could do was bits on the old model.

I read some lore about it being lost simply because the crew all died to a advance virus. So the ship was 100% fine, but full of the dead who manned her. My headcannon is that the flagship being brought down by a virus shamed Starfleet so they recovered the ship and rechristened her quietly to the USS Lakota.

I think the early “Lost Years” has nearly a dozen Excelsior refits.
These would have been replaced in the 2320s by the Ambassador Class. Then, a lot of additional Excelsiors were built in the 2330s (with NCC-4xxxx registries) to serve in lesser rolls. The Lakota was probably one of those, with revised specs.
These later Excelsiors were in the process of being replaced during the TNG movies by the Sovereign Class.

Sovereign class vs Excelsior class. Which is stronger. Excelsior fires six quantum torpedoes and can only collapse a shield facing and cause superficial damage to the hull of the Sovereign. Sovereign fires only four and collapses the shield facing and reduces a decent portion of the hull underneath to molten scrap. No question which is truly better from a technical standpoint.

I've grown to like the idea that it was lost in space after coming across a virus and quarantines itself. I kind of like the idea of a ship that goes through so much and then the moment it thinks it's safe, space juat drops a deadly virus on them. There's a long Naval history of ships being re-named though superstitious sailors believe that's bad luck. It usually happens if a ship is sold off to another nation, there's a change in govt., especially major changes in political systems like when the Nazi party took control of Germany or the Bolsheviks took control of Russia and the new govt wanting to wipe away all traces of the old.
And a ship's name can be changed if a newer ship (usually of a newer or different class) enters service but the older ship will remain in service . That could easily happen with Excelsior class ships and their long service lives. The Lakota could well have been the Enterprise B if it remained in service after the C was launched.
