How do you charge by the job

I normally only charge by the job when I'm confident I know how long it's gonna take me. I've always heard you can make more money by the job but most of the time I end up charging by the hour.
This job was by the hour which was good because the customer didn't really know what he wanted and we were figuring it out as I went.
