I used some for cobbler, gave some away, then canned 2 quarts and 6 pints of blackberries in syrup. So so good. ETA: I almost completely forgot I also canned up a double batch of blackberry jam! I dunno how I could've forgotten that. 😂
I made blackberry pie filling yesterday, I only did a 1" headspace, not good. none sealed. had to reheat filling, new clean jars with the 1-1/2" headspace recipe recommended and waterbath canned. But so worth doing it right for winter pies.

Question I made this and all but three siphoned or what looks like boiling out or over. They all sealed but were sticking. I cleaned them up gave them 1 1/2 head space and canned them again . They all still leaked out but they all sealed. I cleaned them up but I'm not rescanning them. Are they safe to put on my shelf to eat?
If those are wild blackberries you might try not even adding any pectin. I live in Oregon and I never use pectin with wild blackberries. I can’t make blackberry syrup even when I try. It always gets a super firm gel. Save some money on the pectin :)
I really want to make this my husband loves blackberries and dewberries but unless I find somewhere to buy them fresh I will have to wait until next year.

Hi there, I made canned blackberry pie filling for the first time the other day. The filling seemed perfect when I put it into the jars, but was clearly thin when I took the jars out of the boiling water bath. I let them sit overnight, then tried making a pie with one. It tasted delicious, but was super liquid/runny. What would have made my pie filling go from lovely to runny between the cooking and coming out of the water bath?
BLK - I’m a diabetic type II and I plan to research a Sweetner that would be the equivalent of the sugar she put in this recipe. I’ll share it when I find it. Some sweetners are better than others when canning.

I was so disappointed that you skipped from heating the sugar & juice mixture straight into ladling the filling into the jars. I sure would liked to have seen how long/thick etc you cooking the mixture & at what point you added the berries.

You are quite correct ma'am. I have replayed the video several times to see when the berries was added. I guess her camera had issues....

Your math was off. You said you needed 9 1/2 cups. You had 6 1/2 cups of juice and you added 3 1/2 cups of water. That’s 10 cups total.
