Egg, Garlic ,ginger ,soy sauce, sesame oil, and a touch of oyster sauce is typically all I use to make my fried rice ..and I'll add a protein if I have any...but yep it's generally made when we are just trying to eat the rest of the rice haha

How do I like my fired rice? Especially when I haven't steamed it in advance? Fry the uncooked grains in butter until golden. Then steam it per normal--you may have to lengthen the cooking time.
I like mixing the rice wioth the egg first, adding oil, oyster sauce, chopped garlic, then tossing it in the wok. Add mixed veggies and cooked shrimp towards the end. Sprinkle with green onions and sesame seeds to serve.

Hiyaah, checkout Uncle Roger videos for good fried rice. Day old rice, chopped scrambled eggs, soy sauce, garlic, diced shallot, MSG and red chili or Sriracha. Garnish with chopped spring onion. Eat with spoon. No peas, peas just sad, all vegetables sad, you make ancestors cry.
A real Wok has dents or dimples made to hold some of the rice to the side during cooking. No real Wok in a Chinese kitchen is smooth as shown in your video!
When I lived in Hawaii, and worked with quite a few Asians, I found out, they would cook rice, to be used the next day, in fried rice. (This was at a few restaurants and taverns.) There was a diner in Waipahu, that sold about 500 pounds of fried rice, in fried rice omelets. A thin skin of egg, filled with over a whole pound of awesome fried rice. Yes, almost every Sunday. (Met Mufi Hanneman there, one Sunday. Gave him a hard time, since Mormons aren't supposed to be shopping on Sunday.) steve
