Fresh-skinned 'Popiah' Spring Rolls with Mama Yeow

  • Mama Yeow demonstrates how to make fresh-skinned spring rolls or 'Popiah' in a way that anyone will be able to.
    Mama Yeow was cooking for the masses, so, the amounts in the video were more than what most would normally use. Below is an ingredient list with more typical portion sizes. Enjoy!
    One lot of POPIAH WRAPS (about 13 pcs.) requires the following:
    200gm plain flour
    300mls water
    1/2 tsp salt
    Method: Mix all above ingredients together to a smooth moderately thickish batter.
    For the FILLING the ingredients are...
    1 grated carrot
    1/4 small cabbage (finely shredded)
    1 Chinese sausage (cut into little slivers)
    5 cooked prawns (cut into little slivers)
    1 small bundle (50gm) of bean vermicelli (soaked to soften and cut to 3cm lengths)
    2 eggs (to make omelette and cut into small bits)
    1tsp chopped garlic
    2Tbs cooking oil
    1/2tsp chicken stock powder
    Salt, sugar to taste
    Method:
    1) Sauté garlic and sausages in oil till aromatic and garlic is light golden brown.
    2) Add prawns and veggies and toss to mix well for about 2 min.
    3) Then add vermicelli and toss to soak up the juices from the veggies.
    Add seasoning to taste.
    4) Remove from heat and dish into a plate to cool filling.
    For DIPPING SAUCE, mix the following...
    1/4 cup Hoisin sauce
    2Tsp honey or golden syrup
