Went there for a dinner on 03/11/2022. Absolute knock out of an experience, even in the wintertime! Everything was to the upmost perfection, up to the non-alcoholic beverages that were part of the wine and drinks pairing. The bread was to die for, the dishes were out oft his world, the dessert selection was divine and the coffee was outstanding. The theatre kitchen was an absolute must of the must. I already promised my mum I'll invite her one day.

Anders your videos and video quality is exceptional. This is the quality of videos that deserve mainstream view counts in the high hundred thousands or millions. Your channel needs a way to “blow up” you should start having talking portions or some sort of interview with the chefs to create a more of an experience with the videos. But the ambience and visuals are spot on. You deserve way more I’m with you 100%

Could you please consider adding as a standard feature the list of dishes and the approximate price of the tasting menu options in your descriptions?
I am just curious and don't worry not to answer but what is/was (I checked up your internet site, where you wrote that you quit your job to do focus on reviewing restaurants) your job? Thank you for your insight into the world of nordic haute cuisine, it is really interesting what chefs can come up with, especially the Noma's Game and Forest visit has left a deep impression on me...
Loved everything about Frantzén when I went back in October of 2017, feels good being brought up to speed with their new dishes. But did you guys skip the cigars with Carl?
Nice video, - is Frantzen a bit more classic french fused with new nordic than pure nordic? They seem to pay homage to the classic french cuisine and its use of fine and expensive imported raw ingredients such a caviar and truffel in some of those dishes. They also seem to have a bit of old world swagger and elegance about them, which also suits Stchlm as a city. The fusion question is not a critique btw, the goal of any chef/kitchen i think should be to acquire insight, skill and bravery to express ones own voice, not to follow whatever is the fashion.
Good observations. Frantzén is French/Japanese with a hint of Nordic. They use local ingredients if they can, but mostly they want the best of each ingredient no matter where in the world it's from.

Now the latter can happen inside any genre, but i do sometimes wonder if the classic french cuisines repetitive use of certain exclusive ingredients is sometimes less about true culinary expression than it is about following tradition for tradition, or to seek exclusivity via the prestige and cost of the exclusive ingredients by themselves. Now i am not saying this is the case at Frantzen, as i havent yet dined there, it is more of a general culinary worry of mine.
That french toast with cheese cream, aged vinegar and truffles really looks nice. What kind of cheese cream was it? I assume its not just Philadelphia?

I deeply fall in love with the new nordic cuisine wathcing your channel. you still doing a great great work. if you consider a travel in Italy I recommend to you an Amazing restaurant called AGA. it's in a little town near Cortina called San Vito di Cadore. it's a unique example of new nordic in Italy. thanks again

Hi. There is usually no ambient noise on my video unless someone is being interviewed. I do music over the noisy sounds of a restaurant (terrible to listen to when each clip is 2-3 seconds).
That sounds awful. Please don't. And don't worry, you get more than full from this meal. 20+ courses is a lot more than you think. By the time you get to desserts and petits fours, you'll understand.

Frantzen, Maaemo or Geranium? Which is your favourite of those? Not what you think is the best but just favourite food/dining experience.
So hard to say. They each has their own signature, and I love to return to all. Right now, I think Frantzén is the strongest of them.

Usually they have some casual restaurants to make money, while the flagship is there to push it to the limits of what you can do with food.
