Norway's Best Restaurant - Maaemo 2.0 From Esben Holmboe Bang

  • If there is one restaurant that has put Oslo on the culinary map of the world, it's Maaemo. It took a Dane to re-interpret the Norwegian food traditions in a modern way. Chef Esben Holmboe Bang's cooking is rooted in the New Nordic philosophy, but his style is completely his own. Norway's only three Michelin-starred restaurant should be a mandatory experience for both local foodies and destination diners alike. Some signature dishes include Norwegian langoustine, "rømmegrøt" (sour cream porridge) with reindeer heart shavings, and brown butter ice cream. In 2019, Norway’s best restaurant closed and relocated to a brand new venue (losing all three of its Michelin stars in the process). We visited Maaemo 2.0 and can honestly say it’s better than ever - the new restaurant further affirms Maaemo’s status as the epitome of fine dining in Oslo. Expect three Michelin stars once again in 2021!

    Wild strawberries are like a concentrate of pure strawberry flavours. Kid I used to pick them up in the forest . Very difficult to get know not because it is rare but because they do not travel well , they are very delicate so can get crushed very easily and they also get ripe very quickly. Strawberries you see in shops have been genetically selected to ease to control their lifecycle. But in term of flavor it is like 2 different fruits . With a home made Chantilly you have your dessert ...no need of more .

    The new space seems A LOT better than the old one. Hopefully now they don’t have 5 cases of stairs between the kitchen and the fridges where the stagier carrying ~10 gastrotrays will trip, fall and almost break his leg (true story 😂)
    The menu is recognisable - the reindeer heart dish is one of the best I’ve ever had - but does seem to have evolved. It’s nice to see the FOH hasn’t changed too much, they’re great people.

      Hey. We spent 400.000 kr ($40.000) on food from restaurants alone in 2019.

    Did the waiter scoop up the caviar with metal spoon? Such a horrible mistake !

      Just like the metal caviar tins have a protective coating, I believe the spoon had as well.

      This has been scientifically debunked as a myth btw. Restaurants avoid doing it however due to a psychological effect.
