How to make Jiro ramen (Tokyo's famous tonkotsu ramen)

    [How to make Ramen Jiro]
    1. Put pork backfat in a pan, fill it with water, and simmer.
    2. When the dryness is reduced, add water and simmer until the fat becomes jerky.
    3. Put the smashed knack and water in a pan, heat it to a boil, and discard the hot water.
    4. Wash the genkotsu, put it in a pan, fill it with water, add garlic, ginger, and green onions, and simmer for 8 hours while scooping the lye.
    5. Put the pork chunks in the soup, simmer for 2 hours, take out and soak in soy sauce.
    6. Boil cabbage and bean sprouts for 2 minutes.
    7. Mix strong flour, salt, baking soda, and water, knead and step on, and stretch to make noodles (pasta machine → amzn.to/3l0ndDv).
    8. Add pork soy sauce to the bowl and add umami seasoning.
    9. Boil the noodles, put them in 8, pour the soup while straining, add vegetables and pork, add abra and add chopped garlic.

      二郎のスープは小細工無しでガツンと効いて良いものです! 豚骨を煮出す際に背脂を入れて煮る方法もありますよ。
