    I fell in love with Erythritol, and attempted making a 1:1 ratio simple syrup (as you probably did too if you're watching this), and of course we know what happens. It doesn't work and crystallizes upon cooling. Not to be outdone by an alternative sweetener, I contact a chemist friend, who shared with me the highest ratio I could go with the erythritol, and I hacked out the rest.
    What we have here is a thick and luscious simple syrup, complete with a homemade formula for thickening the solution, per your personal preference.

    Erythritol Simple Syrup Recipe (Keto Simple Syrup Recipe):
    1 c. water
    1/2 c. erythritol (Anthony's Brand Preferred for Clear Results)
    Sweet Drops (to taste, about 15-25 drops)
    Xanthan Gum Powder - (a quarter of a quarter measuring spoon, or more)
    Stir all of the ingredients together in a sauce pan. Whisk well. Heat and bring to a boil, boiling one minute. Cool and store in small mason jars.

    Isn't it better to weight the ingredients because it is such a small quantity of xantham gum? I did it for you, the thicker consistency is about 0.25% by weight (for 1000g of water+erythritol you need 2.5g of xantham gum. Just multiply you water+erythritol weight by 0.0025 to get the amount of gum. Using the scale I get the same syrup everytime I make it. That would be impossible taking volume measurements.

      @@arcade-eyes3682 no actually, op is right. Xanthan gum immediately clumps up as soon as it makes contact with water. So Mixing the dry ingredients first makes it less likely for them to clump. The girl in the video isnt wrong but this is just an easier route to the same destination

    Thank you! I'm a born and raised Tennessean and there's as much sweet tea in my veins as there is blood lol I needed a good sugar free option that wasn't filled with unhealthy, slightly more dangerous sweeteners like aspartame. I appreciate this so much!

    Maple was great!! I also tried it with half Orange and half Lemon extract for a nice citrus syrup, and I tried it with Strawberry extract too, for a strawberry syrup, they were all really good. Thanks for the recipe.

      @@sunwueryier5891 Stevia is a plant. I used to grow my own as a fun novelty in the garden. Erythritol is a processed product. It is an alcohol sugar which is fermented from corn syrup usually. They toss in some enzymes to kick up the process. The keto-friendly sweeteners we buy are often a blend of ingredients.

    This is the best!!!!!....I’ve just made a batch for maple syrup😋yum!!!..added a pinch of salt and boom!!!...Keto friendly pancake syrup....yay!!!!...thank you for getting the correct measurements of Erythritol to water cos another recipe I followed turned to crystals😞...yours is the best!!!!

    To stop the xanthan gum from clumping, mix with a little glycerin before adding to the liquid.

      Beet root +While most vegetables are calorie-poor and nutrient-rich (packed with fiber, essential vitamins, minerals, and phytonutrients), because of the carbohydrate content, beet root (like other carby choices-potatoes, corn, carrots, turnips, rutabaga, parsnips, squash) should be restricted on the KETO regime. If you cannot limit yourself to a 'small taste' think twice. Non-starchy beet greens, can be enjoyed in large quantities. Be sure to observe the carbohydrate count under Nutrients.
      Erythritol is a sugar alcohol - adds 0 carbs to your pickles. To prevent crystallization of the syrup use:
      2:1 ratio of Erythritol to Water. If you use a greater amount of erythritol, you WILL get crystals!

      Yield: 5 pints of Sweet Pickled Beets
      Ingredients:
      5 lbs beet roots cooked, cut
      Brine:
      1 cups water
      2 cup vinegar
      1 tsp pickling salt.
      2 cups Erythritol
      1 tablespoon pickling spice.
      Optional: 5 droplets of Sweet Drops
      Instructions for brine:
      1. Place the water, vinegar, salt into a saucepan, along with the erythritol.
      2. Bring to a boil.
      3. As it comes up to a boil, drop in 5 drops of sweet drops. In the final mixture, this will slightly increase the sweetness of the keto simple syrup without tasting like Truvia or Stevia, which many people do not think tastes as close to sugar as erythritol does.
      4. Keep warm.
      Instructions
      Ahead of time:
      5. Prepare: Sealers, lids & rings, by washing and sterilizing. Hold them in hot water until ready for use.
      Cook Beets in instant pot:
      6. Cut green off beets leaving 5 cm of the stems - this is done to prevent the beet from bleeding colour.
      7. Place 5 lbs beets into the 8L Instant pot.
      8. Put in 2 cups water.
      9. Secure/lock instant pot lid in place. Turn the knob to pressure.
      10. Pressure cook on high, 12 minutes
      11. Do a quick release.
      12. Immediately, drain beets, rinse with cold water.
      13. Work quickly, to lip skins off the beets.
      14. Cut small beets into quarters, Med beets into eights.
      15. One by one, remove a hot jar, drain and fill with hot beets. The 5 lbs of beets will give you 5 pint sealers - pack cooked hot beets into each jar up to the neck.
      16. Pour hot brine over the beets. Fill to 1/2 inch below the top.
      17. One at a time, remove hot sterilized lids/rings from the holding liquid, cap
      18. Place filled capped sealers into a canner in hot water bath for 10 minutes.
      19. Remove from canner to cooling racks.

    OHHH Thank you so much for this. I was just bewildered this morning to find my perfect batch of sweet and sour sauce a grainy clump in my fridge this morning. I don't make many things that call for sugar, so this is something I have never come across. I assumed it must be the erythritol, and thank goodness I found your video. A point of interest. I have been mostly making fudgecicles and creamcicles with my erythritol in ratios similar to my sweet and sour, but it does not crystalize... I guess something about freezing it stops the process.

    I'm going to try this later. I'm craving for iced coffee with caramel syrup and I just ordered flavorings such as cherry, caramel and strawberry. This is my problem with erythritol... It always crystallises when I cook it giving me that grainy texture on my brownies. I also tried making caramel syrup before with cream and it crystallised even with xanthan gum. So maybe it is the liquid ratio.

    Sadly, I made this and it still crystalized, quite heavily too, in the fridge (like large clumps). I used an erythritol and monk fruit mix following the same exact recipe here. There is something missing in this process that may cause it to sometimes work for people but not for others. Maybe it was the erythritol/monk fruit mix but doesn't seem all that likely. Back to the drawing board. Thanks for trying.

      Crystallization can come from even one grain of the erythritol not dissolved fully. I’ve also never tested this recipe with monkfruit sugar so I can’t troubleshoot that for you. Have you checked our blog linked in the description? This recipe has many comments over there and you might find something helpful. I would recommend trying it with only erythritol before giving up! - Sarah 😌

    Question: if I leave out the Sweet Drops will it still taste good/sweet enough?
    Because the country I’m in don’t sell liquid stevia at all :( or is there another way to add more erythritol without risk of crystallization?

    if you use Bocha Sweet instead of erythritol then you can use 1 cup bocha to 1 cup water and it will never crystallize, not even in the fridge.. and generally bocha sweet is a little better and i think sweeter.. but also more expensive

      Bocha Sweet is xylitol (it says so in the ingredients). I would tell you that, if you like Bocha Sweet, just buy xylitol for 1/3rd the price, but... xylitol is incredibly toxic to dogs.

    I made this recipe exactly as the recipe calls for. (I did make 6 cups of water and 3 of eythritol) I didn't have Anthony's but I used 100% eythritol. I put Sweet Drops in as well as Xanthan gum. That seemed to take forever to dissolve. When I got finished boiling it and it was starting to cool, I did notice a ring of crystals around the top of the syrup on the pan itself. After it cooled I ladled it into 2 mason jars, trying to avoid the crystals, and have left them on the counter all weekend. When I looked at both of them this morning, one has a small cluster of crystals in the bottom and the other has crystals covering the entire bottom. So what did I do wrong? It's still usable, but I was not expecting any crystals. Was I supposed to use distilled water? Thank you in advance!

      I've made sugar free coffee liqueur many time this way. You didn't do anything wrong, it's impossible to keep the crystals from forming. I've noticed that depending on the temperature of the house it can take longer or shorter to see the crystals. But it just happens. Don't worry about it unless you're feeling the grit in your beverage

      I had it in the countertop for 2 months no problem. I’ve also kept it refrigerated but it never last long around here so I’d say 1-2 months countertop and then make a new batch?

    Think you have some great ideas in this video.
    I searched for an erythritol syrup recipe (for a friend) and thought you had some great ideas in this video. Is there a trick to dissolving the xanthan gum before you added it. Would like to know how you did that. It's a powerful thickener. I really like the creaminess it achieves and requires such small amounts, but it's a challenge to work with.

      I just shake it into the jar and any excess sort of disappears. Haven’t had many problems with dissolving it.

    Since you have a chemist friend, and chance you can find out how longer time processing with heat effects the erythritol? Looking for canning sugar substitutes that are safe. Thank you and great video.

      Do you mean canning substitutes for making jams and jellies? Because I think the sugar in the jam provides part of the preservation. While microbes 🦠 need sugar to feed on they also cannot live in the presence of too much sugar. Therefore, canning is a means of preservation. I don’t know if you can sub out erythritol or other non sugars in place of your favorite recipes. Texas A&M used to provide a free canning school on their website. Very in-depth.     I'm wanting to make homemade jam and those recipes call for 2-3 cups of sugar. How much simple syrup would you use to replace that?

      Trish Woods My friend and I were just discussing how we could make jam with erythritol and I’m afraid to say I don’t have the answer yet. Part of the preserving power of jams and jellies is the high content of sugar. This ratio of sugar to water keeps the water content of the jelly extremely low and makes the jelly inhospitable to microorganisms. If you substituted erythritol for sugar you would be disturbing that ratio. I’m not saying it’s impossible but I need to find more advice by legit food scientists to tell us how to do it safety. So working on that!!

      ik it's been a while since u commented, but xanthan gum is a thickener while gelatin is a gelling agent, so they're a bit different and aren't really interchangeable :)

    Hi, I’m in Australia and was wondering where I could buy distilled water? When you say distilled water do you just mean bottled water rather than tapwater? Also, can I use Erythritol that is 99.5% erythritol and 0.5% Monk fruit? I will be using this is the sugar syrup for margaritas! 🤤

      You don't it just boosts the level of sweetness. You may find that it is sweet enough for you as is. For this recipe, I wanted to give people a way to take the erythritol simple syrup to the threshold of how much you can add before it crystallizes. So, this recipe is as far as you can go. Adding an alternative sugar doesn't seem to contribute to crystallization, so the stevia drops or monkfruit drops add more sweetness but don't make it crystallize. Hope that makes sense. :)

    Has anyone figured out a reliable way to disrupt erythritol recrystallization in water at higher concentrations? I'm not just looking for an erythritol-based simple syrup with sugar-like sweetness, but a way to raise erythritol solubility in water so that the final liquid will have a higher ERYTHRITOL, not SWEETNESS, level. The reason I ask is not for traditional culinary use, but medicinal use in which the erythritol, specifically, has a synergistic effect with the other active ingredients being carried. In short, I'm not looking for a "sweeter" syrup (that's easy enough to achieve with a dash of stevia), but a more "erythritol-y" syrup (whose perceived sweetness is mostly irrelevant). Thanks in advance, I really appreciate any tips, additives, or ideas you can share! :) (Edit: Oops, I almost forgot...! The only catch for additives is that they cannot be acidic. I read certain acids can help, but they are a non-starter for this application. Alkaline additives, on the other hand, would be quite beneficial!)

      IF you mean pure monk fruit extract, then no, well, perhaps, but it would not be one to one as a tiny scoop of pure monk fruit extract is as strong as a cup of sugar. . OTOH, Since most monk fruit blends sold in supermarkets or online as "measures just like sugar" are mostly Erythritol with a bit of monk fruit extract then yes.

      L K. P. We refrigerate ours bc we like it cold. Some readers have had issues refrigerating there SS and I can’t figure out why. It’s shelf stable for at least a month.

    HELP! I'm trying to find a plain non-flavored sugar free syrup to substitute for corn syrup so I can make sugar free pecan pies. Will this erythritol syrup work well as a corn syrup substitute?

      Did you ever find that substitute you were looking for. I know it's a year late, and I personally don't make pecan pies, but I would worry that using erythritol for this type of recipe would result in a crystalized finished product. Many people are using Allulose these days for the reason that it dissolves and does not recrystallize like erithritol does. So, if you are still looking, perhaps look into allulose or blending allulose and erythritol . I hope it works out for you.

      I don't know if this helps, but every time I tried to cook with erythritol (like caramelised nuts) it crystalised and once cool, it was basically a candy! you can try to overboil the water and erythtritol mix and let it cool, it will harden... :)

      GunnerAl9 Hi there. Yes, I do respond to comments as fast as I can but I am also a mom and professional chef and sometimes it takes me awhile to get through them. We have answered this question on the blog post and discussed it with many different readers. We always refrigerate ours bc we like it to be cold. Some readers have had problems with crystallization after refrigeration so we recommend trying both. It’s shelf stable for at least a month. I do not know who 90% of the time it can be refrigerated but the other 10% ppl experience crystallization. Please let us know what works for you.

We discussed it and we felt like telling people to use the 1/4 t. spoon and fill it up 1/4 of the way would be less confusing than the questions we would receive about how to measure 1/16.       @@TheUrbanCowgirl I totally get it. Sometimes you have to make it as simple as possible that it's almost impossible to NOT get it right, hence your measurement plus the visual. I own a demolition and construction company and have to deal with hundreds of people... "keep it simple stupid" as the saying goes. I just thought it was funny cuz I deal with a lot of measurements and I just visualized me saying to a bunch of engineers, " it's a quarter of a quarter guys!". Hehehe :D

      Paq Man Are you suggesting that people on Keto/Low Carb diets don’t occasionally have a cocktail? Because there is keto influencers, products, subreddits, and RUclips channels solely devoted to sharing keto cocktails. There is no sugar in tequila blanco, but you do have to fit the carb count of a shot into your macros for the day.
