- This vegan chocolate mousse is an easy recipe made with only two ingredients. Chocolate and almond milk.
For the chocolate, it is best to use a dark chocolate with 55% to 65% cocoa (all good quality dark chocolates are naturally vegan).
For the milk, you can use any plant-based milk, but I find that roasted almond milk has the best flavor.
If you're not vegan, you can also use regular milk.
When you whisk the mixture over the ice-bath, it should get lighter in color and thicker. Don't let it become too thick, because it will be difficult to pour into the glasses and the texture won't be the best.
However, if it becomes too thick, you can melt it by warming it and start over.

Mine was starting to change texture but wasn’t getting lighter in color so I kept whisking 😂 it definitely ended up thicker but didn’t curdle. Waiting for it to chill and we’ll see how it turns out! Thank you for sharing this very simple recipe!

I think it needs egg white. I used coconut milk instead of almond milk. Good recipe but a bit dense.

Some chocolate bars are scored in little squares so that you can break them by hand, or maybe you can use good quality chocolate chips.

great video. I have a question lol. I used a stainless steel bowl instead of a glass bowl to mix the chocolate and milk. Is that why my mixture didn't thicken? I whisked for more than 5 min but it didn't thicken much. Many thanks in advance.
Hi, no it wasn't the bowl. If The weight of the ingredients was right and the chocolate was at least 55%cocoa then maybe you didn't use a lot of ice.

If you measure the ingredients correctly and use a lot of ice it will work! It thickens suddenly, but be patient :)

Amazing recipe, but when I tried it, the mixture didnt get thicker when I put it over the ice water, I waited long but then the water already went room tempeture. What did I do wrong?
Hi, if you measured the quantities right and the chocolate was over 55% cocoa, then the only thing that could have gone wrong is that the ice wasn't enough. You need a LOT of ice because the mixture is warm and melts the ice quickly
The part where you were chopping the chocolate was so stressful. Never put your fingers under a knife like that!

For diabetics, do you think Lily’s dark chocolate bars would suffice?
Hi, this recipe will work with any type of dark chocolate. If it's too bitter you can add to the milk some sweetener suitable for diabetics. However, I can't give any medical advice, it's best to talk with your doctor :)

If you whisk and it doesn't thicken it means the ice-water underneath became warm or (maybe) the chocolate has a lower cocoa percentage. If you overwhisk it will thicken too much and will look curdled. But in this case you can melt it again and start over

Can i use this for cake fillings and layers?
I can't say because I haven't tried it. It is stable but can't support as much weight as a thick buttercream. If you do use it, the cake will have to be refrigerated because the mousse melts at room temperature

Unfortunately no. If you want to experiment I would recommend increasing the amount of white chocolate 30-50%. As for the cocoa butter I don't think it will work, but you never know!
@@TheHungryBites ok I'm trying to make vegan chocolate mousse cake. bottom layer is like a brownie, middle layer is a firm fluffy choc mousse, and the top layer is a white chocolate mousse. but the original recipe from Americas test kitchen uses gelatin to help stabilize the mousse.

For the white mousse layer I have seen recipes with whipped coconut cream, sugar and vanilla. If I stumble upon something else I will let you know!

You can but when it starts to thicken reduce speed because it can get too thick very fast

Make sure the chocolate has the right cocoa percentage (more than 55%) and use a lot of ice. You need to whisk it for a while and make sure the ice isn't melted
It is 72%, I think I added too much milk
@@miyoko1066 you could try to reheat it and add more chocolate, but it's difficult to calculate the amount (and you may waste more chocolate this way). On the other hand, it will make a nice hot chocolate drink I believe :)

I've heard that some plant based milk curdle when you boil them. If the rice milk can be heated without separating, then it will work fine!

It will, but maybe the cream is a little bit thicker. I would add 1-2 more tablespoons of almond milk

Ok so my bar was 100 grams so that is about 30% less than the bar you used so I cut the milk down by 30% which would have been around 120ml but I added a lil extra milk like you said and bumped it up to 150. Well that was too much so it wouldn’t setup in the fridge. Gonna try again and drop it back down to 120ml of milk.

You can still drink that warm, like hot chocolate :) when you make it again, make sure you have plenty of ice in the bowl under the chocolate. It needs some time until it thickens, but when it starts to thicken it happens relatively quickly.
The Hungry Bites I had a lot of ice in the water. I whipped it hard for like 5 minutes and left it in the fridge overnight. Can’t wait to try it again. Thanks.

Wait is it okay if water gets into the cold mixture
one or two drops is okay (you can also do this mousse with water instead of milk). But if a lot of extra water gets into the mixture it will ruin the recipe ratios

It will depend on the quantity of the ice and the temperature of the chocolate. It could take 5-10 minutes until it starts to thicken
