@@JoelsTastyRide - I discovered you when I used to watch Mark Wien's channel. I remembered seeing you tag along with Mark and his family on some trips. I used to think that you and Mark had the same mannerism, especially when you enjoyed some delicious food. I will be in Thailand in early April for one month! I'm looking forward to this trip because it's been 11 long years since I was there! I had to cancel my trip three times because of the pandemic.
Honestly never knew there were so many different varieties of laap! You articulated all the information so well! Thank you for letting us share these amazing dishes with you and god bless!
My first comment, and i've been enjoying your videos forever. say that to say you look so very happy not only eating the food but enjoying it with your wife and family. so happy for your JOY

So so happy for you all and the time you have shared in Thailand. May you have so many more experiences together and share with so many others. Peace be with you.
Amen! Karen, yes!! Thank you for the prayers thank you for the encouragement. Thank you for the good words today and every video, greetings from my whole family, thank you for spending time with us today.
This week I just learned how Thai people eat with a fork and spoon. I've watched countless videos about food in Thailand, but didn't know the signifigance of eating with a fork and spoon. Since I was a little girl, I have been focused on learning about other cultures. I'm not sure where that curiosity comes from in me. I was so excited to see you all eating this way. I can't wait to go back to my favorite Thai restaurant in northern Virginia so I can explore eating Thai curries in the traditional way. Much love, Angela/Angie/Gigi P.S. My user name is has Gigi in the title, but that is a nickname that I picked up when my niece couldn't say "Aunt Angie" when she was a toddler. 😊
Always great to see you with your Li and parents 💕Everyone is so excited about the food It all looks delicious 😋 Enjoy the food and rest of the evening 😊 Love ya God bless 😊💕🙏🏾
This video is mega awesome Joel!!! Totally a mouth watering video and we love all the foods on the table! Thanks so much for sharing this wonderful video! Your parents are so lucky to have you around in Thailand 😊 Take care & be well :)
Isaan/Lao prefer unfiltered fish sauce, while Central Thai prefer filtered fish sauce. Thus the Central Thai fish sauce is translucent, while the Isaan/Lao is murky and opaque. Both are fermented of course.
Hello Joel, I enjoyed that video so much. Many years ago when I lived in Pattaya, a girlfriend would take me to her favorite little Thai restaurant, where I always asked for Laab Plaa Duk. So many memories. Have been away from Thailand for many years, but will be back again in a few weeks.
Hey Joel, it's been a while, and I'm back enjoying your videos! It's a pity the stars weren't aligned and we could not meet when we were in Chiang Mai. I would have loved that. Let's see what happens in the future. In the meantime, keep dropping new videos brother!
Superb video you guys! ❤ looks delicious 🤤 so you could maybe use minced pork to get something close to it for the meat base if you didn’t have two cleavers to chop the meat etc? 🤔 loved that one well explained too! And the moustache is on point there bro lol 😆 top stuff! Love to you and Li all the best JP x 😊
Hi JP! Yes, mince pork can do it for sure, Im sure in the Esaan-style one it was pre-minced... but yes, the "authentic" or traditional one, its gotta be hand-minced like that. Takes time to do!! JP, have a happy Monday man, BIG fist bump on the mustache-support, thank you sir :). See you again very soon! All the best brotha!
I have only eaten larb once but after hearing about the different varieties, I’d like to give it another try. I think the sticky rice could help temper the heat right? Anything else to cool off the spiciness?
And I might also be here sitting and reading so sleepily that I am getting the feelings of Christmas just by thinking of these messages, I’m so happy right now

Hey Toni! Good question, nice to hear from you. Yes, traditionally in both the North and in Esaan (and Northern Laos), it is. Nowadays there are more cooked versions eaten just because of safety (but many people still enjoy it raw!)
Joel you are an enigma! you talk a lot about umami flavour even related to seaweed. but then you do not request MSG in your food which is often made from seaweed. go figure! 🦄🦄🦄🦄 I saw few (but not zero ) hygiene and food service infractions in this videoo so throne time is not indicated.
I appreciate this message because I appreciate how you are really listening to the video :-) thank you, John! You’ve also given me something to think about today! I guess it’s the same with GMO vegetables, no definitive research, whether they are OK or not but somehow it seems worth avoiding, even though the end product looks the same (maybe even tastes better than the original!)
Thank you! 😃 Alex man, I am totally blown away. You are just the superstar of this channel right now, I want to thank you SO MUCH for all the great messages. Really, really cool man. Thank you!
