Did you stabilize and wait 24hrs before adding the strawberries? Or did you add them right away? Might be worth waiting a day between stabilizing with chemicals and adding sugars to see if it helps with your refermentation issue. I'm still learning so I may be wrong, but IIRC waiting is recommended.
The color of your strawberry meads are always so nice reddish. Mine just look like normal mead. Maybe a little red. To carbonate the strawberry is a great idea. Sounds like a nice summer drink. I also will make it. Maybe with your recipe I will also get this nice color.
How much do you add per gallon, perhaps it's not enough to impart so much color? Or it may be the time spent sitting in the mead? Let me know how it goes if you try this!

I have the copper version same size uKeg. I’ve actually managed to carbonate high ABV meads before. Just uses way more cO2
