I couldn’t agree more with your statement that it’s pretty hard to mess up a mead. When I’m underwhelmed by a fruit wine I will often try to make a mead version. I do tend to like a bit of tannin, so I’ll often turn to black tea, wine tannin or oak for that… unless the fruit has a lot of seeds (blackberries, raspberries… etc) as they tend to provide a lot of that. Mmmm… I ‘need’ to start a strawberry mead. Thanks for reminding me. It’s been too long!
How do you date your wines/meads? Typically I date when I bottle them, but I have several that are bulk aging (due to laziness) for 6+ months and may end up closer to a year before bottling.

Actually no, the broken corks are a pain to deal with. I use vacuum stoppers, to save leftovers.
