    Welcome to Nur Maki's Kitchen.
    Today, I made Kansai-style okonomiyaki.
    Actually, I'm a expert of okonomiyaki as I'm from Osaka (Kansai) ;D!
    I used to make okonomiyaki at home since I was a child.
    Let me tell you the difference of Kansai-style and Hiroshima-style okonomiyaki.
    When making Kansai-style okonomiyaki, combine all ingredients together before cooking.
    It is the predominant version of the dish, found throughout most of Japan.
    For Hiroshima-style okonomiyaki, the ingredients are not mixed together.
    Instead, the batter is cooked like a thin crepe and the ingredients are layered.
    And usually add noodles.
    Otafuku okonomiyaki sauce is an essential part of okonomiyaki and it has the largest market share in Japan.
    OTAFUKU MALAYSIA acquired HALAL certification for their okonomiyaki sauce in 2017.
    It's the best okonomiyaki sauce than any other sauce!!

    [Okonomiyaki for 2]
    ・Cabbage...160g
    ・Flour...160g
    ・Benishoga (Red pickled ginger)...10g
    ・Milk...120cc
    ・Nagaimo (Mountain yam)...60g
    ・Egg...2
    ・Dashi powder...1 tsp
    ・Salt...1/2 tsp
    ・Prawn...6
    ・Squid...1
    [Serving]
    ・Otafuku okonomiyaki sauce
    ・Kewpie mayonnaise
    ・Aonori (Seaweed Flakes)
    ・Katsuobushi (Dried Bonito Flakes)

    hi i want to ask is there something similar to dashi powder like something that could substitute it? is red ginger an option?

    is hon dashi is the same as dashi? or differ

    Since where I live Nagaimo is hard to find, is there any other ingrediant that I can use instead of it?

      Sorry for the late reply. Yes, Nagaimo is hard to find here too...
      When I don't have Nagaimo, I add a little water and make it without Nagaimo.
      You can make a delicious okonomiyaki without Nagaimo. :)
