We've done the Winnipeg to Niagara Falls drive several times and we have stopped at Thunder Bay and Sault Ste Marie which does give more time for roadside stops and to explore those cities. But we usually want to spend more time at our destination so we've done the single stop at Wawa. It pretty much is the halfway point. Hotels there book up really quickly because there is not anything else around it for hours in either direction so make sure you book in advance! I agree about taking advantage of the gas stations you come across. Same with rest stops...especially if you are drinking lots of water and coffee in the car. Oi. We have also done the Winnipeg to Banff drive though we stopped overnight in Regina as we have family there.

Do this every week. Gotta try it in a car sometime. Takes 2 days in a truck. Winnipeg to white river, 12.5 hrs. White river to Mississauga 11.5.
