A hot tip for sewing bind-offs on plotulopi and other similar unspun sweaters that I heard from a podcaster is to just buy a skein of letlopi (which is a spun fiber), and then use it for the sewing! The Icelandic company that makes these yarns makes them all in common colors just so that this can be done!
Very happy that the YoutTube algorithm has introduced us. I'm also in the North East of England which can feel like a knitting desert at times. I've not been brave enough to try unspun yet, so found this very interesting. I agree with your decision to not introduce colourwork in the sleeves. I think it might effect your gauge which would be a real shame.

I've been wearing the sweater and it is by far the warmest one I own (though it's also quite scratchy, in case you're sensitive to that).
