Whipped cream frosting on a 1-tier cake usually has no problem sitting at room temperature for few hours. If you are making a 2-tier cake or need to have the cake outdoor in a warm climate, I'll recommend using buttercream. 🙂
Hi Ritu! If it's for a 7" pan, you can use one and a half of everything on the recipe. for 8" you can simply double the recipe 😃. I've never use a 7" cake pan, but had double few of my chiffon cake recipes for a 8" pan and it works!
