Homemade Vegetable Soup

- Homemade veggie soup in my Ninja Speedi, this recipe can also be made in a regular pot
INGREDIENTS
1 stick of butter
4 cups (950 mils)of vegetable broth
2 cups (475 mils) of water
5 small/medium Potatoes
2 large Carrots or a handful of baby carrots
1 medium Turnip
1 medium Parsnip
4 cloves garlic or 2 tablespoons of minced
1 leek
1 large onion
2 tablespoons of flour (optional if gluten free)
1 teaspoon salt
1 teaspoon pepper
1 teaspoons all purpose seasoning
1 teaspoons of garlic & herb mix (Mr dash)
1.5 cups (350 mils) of milk (optional)
SPEEDI METHOD
Add stick of butter to your Speedi and set to sear & sauté
When the butter is melted, Add onion,leek & garlic and sauté until onion is translucent. Stir ingredients to cook evenly
Add 2 tablespoons of flour and stir in. Leave cook for roughly 3 mins
Add half a teaspoons of each salt & pepper
Add in vegetable stock, water and remaining vegetables
Add in app purpose seasoning and herb mix, give a good stir to incorporate all your ingredients
Close lid and set to speedi meals for 20 mins (it will take roughly 8-9 mins to come to pressure)
Every 5 mins stir the contents so the top veggies don’t burn
After 20 mins is up, carefully empty ingredients into a bowl & allow to cool for 10-15 mins
Take your food processor or blender and add your ingredients in small batches and blend until smooth
Add blended soup back into pot and set to sear & saute
Stir in milk until completely incorporated
Add remaining salt & pepper.
Feel free to add more salt, pepper etc to adjust to your liking.
Bring to the bubble to ensure it’s hot
Serve & enjoy! ☘️
STOVE TOP METHOD

Add lid to your pot, being to the boil and turn down to a low bubble for 20/30 mins (until vegetables are soft.
After 20 mins is up, carefully empty ingredients into a bowl & allow to cool for 10-15 mins
Take your food processor or blender and add your ingredients in small batches and blend until smooth
Add blended soup back into the pot
Stir in milk until completely incorporated
Add remaining salt & pepper.
Feel free to add more salt, pepper etc to adjust to your liking.
Bring to the bubble to ensure it’s hot
Serve & enjoy! ☘️

Looks good! Your recipe is how I make a stew in my stove top pressure cooker. I use about a 1/2 pound of stewing beef,which I brown in the cooker as the first step. I then toss in the same veggies and seasoning as you use with some broth,and PC until tender,about 15 minutes. Seems to take forever to get the pot up to pressure,but then it only needs 15 minutes of cooking.
