Anyone who tries this recipe, after you make your crispy sage try putting a bit of balsamic in the pan on very high heat and making a quick pan sauce - absolutely incredible! I know its not part of the traditional recipe but its very nice.

He put two sage leaves on a piece of veal, seasoned it with salt a pepper, covered the leaves with a piece of cheese, then covered that with prosciutto. He then secured it with a toothpick, dredged it in flour, and fried it in 3 tablespoons of butter. Then he served it with a green salad mounted on top. Yes you were just watching him cook, so how did you not see what he did?
